What’s Up Week??

Well we have a couple new recipes on the list for this week, mostly because I don’t want to food shop until Thursday and I’m destined to use what we have in the house! So first up is Chicken & Potatoes Italian Style. I just put it in the crock a second ago!! I actually added some sliced Zucchini & Summer Squash on top so scroll down to the end of this post to see how it turned out! Tomorrow I’m making Momma’s Sheppard’s Pie, It’s a bit different than most so be sure to check that out tomorrow!! Thursday a recipe that will have Thin N Trim Chicken Sausage in it, it’s awesome because it’s fat free and super low on calories, it’s an easy way for me to turn a pasta dish into something that’s not so bad for you, the last time I cooked this I made Chicken Sausage & Pasta but my hubby wasn’t a fan of the stew tomatoes, he said when he pictures pasta he wants a big bold pasta sauce LOL….me, I like a little and love stewed tomatoes so I’m trying to make this one different and use a creamy sauce instead.  

We had a pretty important day today but I think it’s a story that deserves it’s own page so click here to read more about A Strong Woman. So since my hubby took the afternoon off we had a few hours and when he said “Let’s go spoil boo with some of my over-time money!!” Who was I to say no!! So here is she is with her new alphabet matt and her new grocery cart since she loves pushing things around (she’s been pushing my ottoman on wheels around for weeks!) Good choice momma & Dadda!!

So here is the break down of the Potatoes & Chicken Italian Style, it was good, the seasoning was actually really good but I think it would have been better over rice believe it or not, so I will do that seasoning again!!

So I started this meal at 2pm that was the beauty of it honestly. I sprayed my slowcooker with cooking spray and chopped my potatoes and veggies.

I put the potatoes on the bottom of the crockpot and seasoning them with the dry italian seasoning.

I then layered my chicken on top of the potatoes and seasoned it well.

I then layered the veggies on top of the chicken.
I then took the italian dressing (I used light) and poured it around the edges of the crockpot so it would drop down to the chicken. I cooked it low for 3 hours. Next time I will add the potatoes first, cook them for an hour on high then add the rest and cook on low for 3 hours 🙂 Overall not a bad dinner!
