Tomorrow is the Big Day!

Miss Madison goes to Daycare!!! AHHHHHH!!!! I’m so excited and nervous at the same time!! I think the only part that is going to upset me is seeing her so upset when I leave, a quicker exit is probably instore for us LOL!! Is it bad that at 9am this morning she was just about packed for tomorrow?? Don’t worry I have plenty to keep me busy, I have a trip to Walmart planned, a trip to Walgreens because our vitamins are on sale then this momma is YES FINALLY……….FINALLY hitting the gym!!! God I can’t wait, it feels so good to actually look forward to going and not have to drag myself their, though after tomorrow I may be dragging myself their LOL!! My baby is going to school!!! LOL… Here she is all packed up! Also, happy 16 months to my precious baby girl!

So today Maddie and I spent some good time together, she napped really well and I cooked a Pork Tenderloin, it was pretty good, I just rolled it in a packet of Lipton Onion Soup. I layed it over a sliced onion and mushrooms. I thought it was great, but not the best I’ve had, I think it would have made an awesome pork sandwich so I’m putting it under Onion & Mushroom Pork Pulled Sandwich šŸ™‚ YUMMY!! I also made it with the Wilted Bitter Greens w/Crispy Walnut Goat Cheese. The only thing I changed up here is I used regular seasoned bread crumbs because I didn’t have time to make my own and grind the walnuts and such to coat the goat cheese, they were very tasty, the only one thing I suggest is letting them sit in the freezer longer than 15 min before frying them, mine fell apart šŸ™ We still got the awesome taste but I was bummed they fell apart! I liked the idea of a warm salad it was yummy!!

Tomorrow since I’ll be running errands (alone!!!) and will be picking up my boo around 4ish I’m going to make the a new recipe I found from another group I belong to on FB, I’ve had Turkey Breasts in the freezer for a few months now, I thought I bought chicken breasts and bought these instead and I’m not a big fan of Turkey Breasts, but this is a great way to use it up. Turkey Fajitas.Ā 

Today I also added two new posts. I decided to start a theme called Life as Mom. This is when I discuss a topic and the thoughts and stories are from this momma. Any others come from an article or website I find that has some great topics for mommas. So todays topic was Life as Mom: Negative vs Positive Thoughts.Ā The other aritcle I posted was something I found interesting about “healthy fad diets” what’s right and what’s wrong. That one is under Kitchen/Cooking Tips. That one is called Common Diet Secrets that don’t work. Let’s see what else is up for this week, I’m going to be making a new recipe for Stuffed Peppers with Quinoa!Ā These great ladies in a group I belong to on FB suggested this one to me, I can’t wait to try it, it’s meatless andĀ is low in calories and fat! Ā I also was referred through a fellow recipe goer about a stuffed pepper recipe in the crockpot!!! YUMMY….I’ll post that one soon for you dedicated Crockpotters out their! Speaking of Crockpots, my new one should be in tomorrow!!! I can’t wait to use it!! What else……Oh I’ll be making the Crockpot Lasagna for my MIL when she visits this week, hopefully the snow won’t kill that visit!
