Z is for Zuchinni Pizza Casserole

I can’t believe we are on Z already! It went by so fast! I can’t wait to see what the top 5 viewed letters/recipes were! Join me tomorrow to see what they are! Now for Z…….I made this awesome Zuchinni pizza while back, now that I think of it I can’t believe I haven’t made it again! It was healthy to boot!! I think I’ll be making it again very soon because now that I’m posting about it, I want it!! Thought it’s an extra post for me everyday, and was a lot of work I’m sad to see this challenge coming to an end!!

Ingredients:

4 cups shredded unpeeled zucchini 
1/2 teaspoon salt 
2 eggs 
1/2 cup grated Parmesan cheese 
2 cups (8 ounces) shredded part-skim mozzarella cheese, divided 
1 cup (4 ounces) shredded cheddar cheese, divided 
1 pound ground beef 
1/2 cup chopped onion 
1 can (15 ounces) Italian tomato sauce 
1 medium green pepper, chopped

So the first step is to make the “crust” so you need 3 zucchini’s. I cut them in half and used a hand shredder to shred the zucchini. (my late grandmothers hand grater, I’m so happy to be using it for the first time).

Once you shred all of the zuchhini you want to transfer it into a strainer, add some salt and let it sit for 10 minutes. Then you want to drain out all of the water using a papertowel.

The next step would be to transfer it back to the bowl, add your 2 eggs, 1/2 Cup of parmesan cheese and 1 Cup of Mozzarella Cheese. I then mixed it together with my hands. (like you do a meatloaf) 

Spread the mixture out into a 13×9 greased pan to form a crust. Bake, uncovered at 400F for 20 minutes, you’ll see the mixture turn a light brown. While this is cooking Saute your chopped onion.

 Add your Ground Turkey and seperate until browned.

Add your sauce or stewed tomatoes to the pan. I used some sauce and one can of diced tomatoes. Stir to warm in the pan and then transfer ontop of the zucchini cooked crust.

Once your peppers are chopped, add the remaining cup of mozzarella cheese and cup of cheddar cheese and top with peppers. Bake in the 400F oven for 15-20 min, until you see the mixture slightly bubbling. Let stand for 5 mintues before slicing and serving like a pizza!!
