I was in search for a Gluten free Chilli for my cousin’s party this weekend and I couldn’t find everything I wanted so I ended up just making my own up!! My hubby loved it, now I have to pass it onto my cousin to see if it’s ALL gluten-free, I served it with Baked Blue Corn Chips. I loooove making Chilli!
Ingredients:
1 lb. of Ground Turkey Breast
1 Onion, diced
1 Can of Chickpeas (rinsed & drained)
1 Can of Diced Tomatoes (I used the one with chilli’s)
1 Can of Cannelli Beans (rinsed & drained)
1 Can of Gluten Free Black Bean Soup
2 Tbsp. of Chilli Powder
Cayenne Pepper to taste
1 Sm. Can of Tomato Sauce (Optional)
2 Tbsp. of Parmesan Cheese
Handful of your favorite Tortilla Chip
Directions:
Cook ground turkey breast and onion in a stove top pan.
Meanwhile, add all of the remaining ingredients to a Crock Pot.
After the turkey and onion are cooked add it to the Crock. Cook on Low for 4-6 hours.
Add the Tomato sauce during the last hour depending on the consistency of how you like your chilli.
Also add more pepper to your liking. I try to spice mine up more and more each time I make Chilli! I used the Baked Blue Corn Chips because they are lower in Calories and Fat.
