Just Another Manic Monday

Well this momma is down and sick again but really wants to stay in the loop with everyone because this is my savior everyday. Recipes, Recipe exchanging, Recipe suggestions, cooking for others, it’s really helped me realize how much I love cooking and writing. How the kitchen brings me into a whole other world where no one but me and the lovely tastes all come together. How it relaxes me, zones me out, refreshes my very hectic minds at time! How writing still amazes me everyday, how it rejuvenates my mind and allows just a good ol’ stay at home mom use that great mind she worked so hard on developing over her 33 years!!

Soooooooo with that, I have so many things to share with you, first off, Super Bowl! Here is how I started my day….

  

Hello…I don’t even watch football but yes I watch the Super Bowl, strictly for the food, half time show, commericials and of course good ol’ wine!! I went to a friends house for, well most of the first quarter LOL, my MM didn’t make it very long. Though she showed up styling we headed home early, but before we did, I got some feed back from the dishes I cooked, I know my Hickory-BBQ Wings are always a success how can they not be with just the right blend of Smoky vs Spicy….plus when they sit in the crock all day the chicken is just so tender, even I would eat them and I don’t eat meat on a bone, little does my hubby know that I saved some drumb sticks and wings just for him that I can make him sometime soon! I also made the Salsa Roll Ups which I could help but snack on as I made them, saying “Oh that one fell apart, I guess I’ll have to eat it!!” Then I heard 2 men, yes men say how much they liked them, those went like hotcakes! I struggled with the Spinach Cups just because I used fat free yogurt and reduced fat feta so of course the less fat you use the less taste their is, so throwing in more flavor with salt and pepper seemed to do it enough for me and their weren’t many left when I left!!

And lastly the Skewed Spicy Sausage. (I forgot to take pictures of this one :() I decided to use a pkg of Buffalo Chicken Sausage and then a pkg. of Veggie & Herb Chicken Sausage, I cut them up and sauted them for a few minutes adding in 3 cans of pineapples and tossed them in the Spicy Sauce the recipe called for. Super Simple and awesome flavor, when I put out the Buffalo one I dripped the hot sauce on it and left it to the side to use for dipping and I kept the Veggie & Herb one clean for those not so spicy people. I didn’t get to make the Pizza Bites, but don’t worry I snacked on them when I got home by myself and curled up with a glass of wine! The one thing I can’t seem to get down with these is making them crispy like pizza crust, I’ve tried adding oil and sprinkling parmesan cheese on top and I’ve also tried baking them longer, I don’t know but I’ll keep working on it! Well I’ve still been watching all of my favorite cooking shows, and I’m making a list of my favorite recipes I want to try and post for you guys….of course we have Valentine’s Day Must Eats coming up too. I can’t wait to share with you what we’ll be doing as a gift to daddy this year, I’ll have to make sure he doesn’t read my entry tomorrow because I plan on sharing it all with you!!

Since I didn’t feel too well today I decided to try the Chickpea, Bean & Kale Stew, I was hesitant, I love Chickpeas and Beans, their is stewed tomatoes in it, I’ve never had Kale but I knew it was like spinach, it needed something more so I put a can of bean sprouts in it, it smells amazing and it tasted just as good!! Something different, I’ve discovered I love making any soup!! Hopefully tomorrow I’ll get to the Stuffed Pork I’ve been dying to try!!

Ok lets recap the recipes I added in the past week because we were so concentrated on Super Bowl I snuck some in their on you!! Don’t want you to miss any! Tomorrow we’ll be adding some treats for your Valentine!!
