I’ve Officially Declared It A Leftover Day!

You can declare it a leftover day when you have over 3 nights of leftovers in the fridge, plus the chinese food your hubby brings home for you but your already sleeping 🙂 That’s my new rule….So this Momma is not stepping foot in the kitchen today!! Don’t worry I have a lot to fill you in on from the weekend!!

I didn’t cook as much as I would have liked to but I really don’t have a choice their is way too many leftovers in the fridge! I made the Slowcooker Sweet Barbacoa Pork, I served it over the Fiesta Lime Rice I was talking about, I also ended up making a Cold Green Bean Salad which turned out awesome, super easy and I think it’s a great spring/summer dish! I also made Momma’s Turkey Burger Panini’s, my hubby wasn’t a fan of them, I’m not sure why but I thought they were awesome!! I will walk you through each recipe….because it’s fun, because I can!

So Saturday morning I put my Pork Roast (2 lbs) in the crockpot at 9am. I seasoned it with salt, pepper and garlic powder. I put in 6 oz of coke zero, 1/4 Cup of Brown Sugar and 1/4 Cup of water and let it sit on my counter for 2 hours, I didn’t put it in my fridge like the recipe called for because it was still a bit frozen.
After two hours I turned it on and cooked it on high for 4 hours. So at 3:30 I took it out and shredded it with a fork and knife. This was easy because it was falling apart at this point.
I then put in a can of diced tomatoes (I didn’t have a tomato so decided the diced tomatos would work fine, I just drained the heck out of it) A can of green chilli’s, 1/3 Cup of brown sugar, 6 oz of tomato sauce, 8 oz of coke zero, chilli powder, cumin, salt, pepper, and garlic powder and put the shredded pork back into the crock and stirred it all together and cooked it for another hour and a half or so.
All I did was pop it into a serving bowl for my friends and they could take as much as they wanted! It was perfect served over the Fiesta Lime Rice!
The rice couldn’t have been any easier to make! I boiled two bags of Jasmine Rice, while that was boiling, I drained and rinsed the beans.

I knowing rinsing is important because it gets rid of the sodium. I took the beans and corn and put them in a microwavable dish and nooked them together, why not!
Then I just added it to the cooked rice.
I then added the drained diced tomatoes, salt, pepper, cilantro, and lime juice! Wala….I made this ahead of time and just microwaved it when we were ready to eat, I try to do that when we have people over for dinner so I can socialize and enjoy myself as well!
This rice would really be good with any dish!! OK so now moving onto the Cold Green Bean Salad. VERY easy, I used fresh green beans just because I happened to have them, but frozen would be fine too. So I chopped the ends off and sliced my onion.

I boiled my green beans and just kept tasting them to get them to the “crispiness” that I would like for a cold salad. Have to have a little crisp!! Normally when making green beans I like them VERY cooked.
I then just cooled off the beans in cold water so they wouldn’t cook more. I put them in a serving dish with the onions and almonds and let them cool for awhile before adding the balsamic. I added the balsamic and let them sit in the fridge until we were ready for dinner! Wala!
Here is what we had. A fantastic dinner that was a sinch to make, everyone loved it!
But don’t worry I’m not done!! I have Momma’s Turkey Burger Panini that I made for lunch yesterday! These were Southwest Turkey Meatballs that I made into turkey burgers a few weeks ago and I froze two of them. Too much onion for my hunny but never too much for this momma!! Sooooo I just defrosted them, tossed them on the grill pan along with slices of whole wheat italian bread and slices of canadian bacon (it’s healthier than regular bacon right!!??)

I also added a piece of 2% American Cheese but you can use whatever cheese you like. I also added the horseradish sauce I made earlier in the week for our Garlic Steak. I put some on each peice of bread, honestly this made the sandwich!! All it is is a cup of light sour cream and 2 tbsp. of prepared horseradish……SO YUM!
Once the turkey burgers were just about cooked I cut them in half for each sandwich! I added the bacon and then used my famous Pampered Chef Grill Mate and made it a Panini!
Can we say YUMMO!! You gotta try them….do it you know you want to!!
