Well my best friend and I did make the Skinny Chicken Marsala last night. We changed it up a little bit but it was soooooo good!! Instead of broth we used cream of chicken soup, probably 3/4’s the can everything else was the same except we added broccoli to it! Tonight I’m going to try the Meat Loaf Cupcakes again but this time instead of using mashed potatoes on top I’m going to use butternut squash. I’m taking 2 different recipes and putting them together, I’m going to use the recipe for Individual Salsa Meatloaves but put them in the cupcake tins and top with the butternut squash. I also have a little bit of asparagus, a few carrots, a broccoli floret….I think I’ll just cut them all up and roast them in garlic, olive oil, salt and pepper! YUM!!
Tomorrow I haven’t decided on making the Lasagna Spinach Rolls or a Mozzarella, Tomato & Spinach Stuffed Chicken recipe I’ve been in search for. I couldn’t find one I liked so I’m making one…..Check back for it!
I added a recipe I saw on one of my favorite cooking shows that is on the food network channel at 2pm It’s Secrets of a Restaurant Chef starring Anne Burrell, looooove her and this salad looked awesome! Plus it’s warm how different is that, so heck it out under Anne’s sections, Wilted Bitter Greens w/Crispy Walnut Goat Cheese. YUMMY!! I also added another quiche, this one is for my boo!!!! Broccoli Crustless Quiche.
I’m also planning another date night for me and my hunny bunny. Either next Thursday or Friday, I haven’t decided yet but probably Mar 3rd, Friday!! The salad and goat cheese from Anne’s show today will be on the list!!!
Today was a PJ day, it was great, Maddie and played all day. And now this momma is off to cook dinner while daddy is at the dentist!
