Fruity Creamy Crepes

This recipe was adapted from Melissa’s Crepes! I have to confess I didn’t make my own crepes in this one, but I do plan on it soon because I think the homemade ones are the best ones! My grandmother used to make them when we were little, I can still taste them! For now I had this thought when I bought the pre-made ones…..little did I know their was a recipe right on the back! I just changed up the fruit a bit from what I had in my fridge! Mmmmm….The Crepes were low in calories and fat and I used light cream cheese, the rest is fruit (ok and a little sugar!) so I made a few peices of center cut bacon with it! Man I wish I could have a breakfast like this everyday!

Ingredients:

Serves: 6

2/3 Cups of light cream cheese
1/3 Cups of powdered Sugar
3/4 Cup of light sour cream
1tbsp of lemon juice
1/2 zested lemon
6 Melissa’s Ready-to-serve Crepes
2 tbsp of light syrup
1/2 Cup of fresh rasberries
1/2 Cup of fresh blueberries

What to do:

In a bowl combine cream cheese and powdered sugar.

Blend with an electric mixer until smooth. Add sour cream, rasberries, lemon juice and lemon zest and blend.

Spread mixture over each crepe and roll.

Refridgerate until ready to serve. Pour a little leftover mixture on top and scatter blueberries. Add a pinch of powdered sugar and drizzle the syrup.

I didn’t even eat them all! So full and filling, yes next time I’ll make the crepes myself!
