Featured Friday – Sixtyone45

Happy Friday everyone!! It’s my favorite day of the week!!  Time to introduce you to another great blog and another fantastic recipe! I came across Lisa’s blog awhile ago actually. I had her scheduled to be featured in December, but then the Sandyhook Shootings happened and on the Friday Lisa was scheduled I decided to take part in a recipe that was in honor of the victims. Lisa so graciously rescheduled with me totally understanding why I wanted to do something in honor of such a horrific event.

Soooooooo let me introduce you to Lisa who blogs over at Sixtyone45. Lisa lives in British Columbia, Canada with her husband and little boy. She is someone to admire because after spending 15 years in personal and commercial banking, after a year of staying home with her son she decided it’s where she belonged. All of us Momma’s (parents) out there know how hard of a job parenting is, but being in the situation where I had to choose between going back to work or staying home to raise my daughter, I for one, know how Lisa feels. It’s the hardest job out there, however it’s the best job out there.

Her hobbies include cooking for her family, photography and baking. FYI-her photo’s are amazing. You have to check out her Portfolio!  Though she’s never taken a photography course or had any culinary training her recipes and pictures are one to admire. She gives me hope, maybe I can get better at this picture taking thing someday!! I’m glad to know I’m not the only one who has to take 100 shots to get one great one Lisa!! 🙂

She is a lot like me in the “making lists” department! OK so another reason why I may like her, I’m a “make a list” kinda girl too, specially these days with the good ol’ baby brain going on. Maybe it’s the career back ground since mine is with numbers too, but I too agree with you Lisa, our children surly did NOT come with a check list!! 🙂 Check out her list of things she’d like to accomplish in the kitchen someday.

On that list Lisa talks about making her own Animal Crackers from scratch, whole grain and all. I almost attempted this recipe myself, it was between this one and the one I ended up choosing. She has attempted them before but she wants the cute cut out animals crackers, you know the lions, tigers and bears oh my! I will be back to make this recipe soon, because I agree with her, having a cookie jar full of a healthy nutritional snack is a must for my kiddo’s too! A few other of my favorites were:

Slowcooker French Onion Soup – I actually made this awhile back for a #SundaySupper event we had! SOOO good!
Applesauce & Pumpkin  Mini Loaves – I think this one Madison would love since she LOVES applesauce!
Dark Chocolate Pumpkin Nanaimo Bars – I almost made these too if I only had a can of pumpkin puree in my pantry!
Southern Italian Inspired with Caramelized Onion and Mushrooms– This is Lisa’s latest creation, OMG these pictures make me want to actually eat my computer screen!

OK so what did I pick………What yummy recipe of Lisa’s did I decide on? Well Since my mom has moved into the in-law on our house she’s loved making big dinners. My dad has been gone for so long now and my sister and I have been fending for ourselves for years,  I know she misses cooking, so who am I to say no to a Sunday Ham dinner when she asks if we are interested???!!! I was getting to know Lisa and her blog that day so I searched through her dessert goodies and decided on these little babies……….

 It was the perfect ending to a nice big family Sunday Dinner. My husband and I topped ours with Mocha Vanilla Frozen Yogurt and sliced strawberries, pulled up a throw blanket, watched the Oscar’s and DUG IN!!!
