Cupcakes In a Jar

I found this recipe in my Parents magazine, they look soooo cute!! But best of all I think they make a great dessert or gift for teachers or coworkers because you can tie a little plastic spoon to each jar….plus they look YUMMY!!!

Ingredients:
1 Cup (2 Sticks) butter, softened
4 Cups of powdered sugar; divided
1/4 Cup of skim milk
1 tsp. of Vanilla
12 unfrosted red-velvet cupcak (I’d just use Betty Crocker)

Make It:
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add 2 cups ofthe powdered sugar, the milk, and the vanilla.
Beat until smooth. Add remianing powdered sugar and beat until combined.
Beat on high speedfor 2 minutes.
Place the frosting in zip lock bag and cut one corner of the bag; set aside.
Cut cupcakes in half horizontally and place bottom halves in the jars.
Pipe a layer of the frosting over the bottom half.
Carefully place the other half of the cupcake on top of the frosting, pressing down gently.
Pipe more frosting on top. Makes 12 Jars.
