Cindy’s Recipes & Writings – Featured Friday

Hello everyone! Happy Friday! I love me my Friday’s! This week I’m featuring a pretty special lady I’ve known since I joined the #SundaySupper team. Lets give a warm welcome to Cindy!! Applause applause………Cindy is the blogger, writer and chef behind Cindy’s Recipes & Writings. The name may sound familiar because she helped this Momma out last summer and did a guest post for me!! Read it here.  Maybe I should have emphasized writer because this gal is a writer! She shares a few of her samples on her blog too! I’ve always known Cindy for her awesome contributions to our #SundaySupper table but it’s been nice reading some of her writings this past week as I got to know her and her blog as well! The poem she wrote To My Granddaughter, just beautiful and it was a Blue Mountain poetry winner!! Have you ever read a Blue Mountain Greeting Card? I love them!! Cindy’s Poem was one of 100 selected from 100,000 resulting in this very greeting card, how cool is that??!! So this lovely resides in PA and is also an avid gardener, professional cook, environmentalist, mother and grandmother.

So how about some recipes I want to try of Cindy’s that I know myself or my family would love, lets get to them! I’m always looking for a new way to make Spaghetti Squash so I’d love to try it casserole style like she did!! Yummy!! How about her Broccoli, Cauliflower, smoked turkey and orzo salad, hello all of my favorite things in one dish! Win Win! OMG or her Spinach Pesto with Ravioli and Zucchini. WOW, I just pinned this baby to try because I hate how loaded pesto sauce from the store usually is, this is a great alternative. Another one I found was her BLT Quesadilla with Avocado Mayo, I’m a Quesadilla freak but never make them because can never flip them, so I just order them whenever we go to a Mexican place! Cindy’s way looks so much easier I can’t believe I never thought to make them this way! Oh and by the way I’m so making her Vegetable Stromboli, I love combining a whole bunch of veggies (makes me feel healthy) why not shove it in dough!!

Are you dying to know what I made of Ms. Cindy’s???? 🙂 Well one #SundaySupper back in September she made a dish for our tailgating theme, this one caught my eye because I always like to make up a huge dish of something healthy at the beginning of my week so I can have lunch on the go throughout the week, with two kiddo’s in tow I’m on the go a lot so it’s essential to me to have that healthy dish in the fridge that I can woof down in the matter of a few minutes I usually get to eat! I have always wanted to make a “tuna casserole dish so this one was going on my must make list! I was not disappointed, I liked it so much I emailed Cindy right away and asked if I could feature this very dish!

The only thing I changed up was the kind of pasta I used just because I happened to have all of the ingredients one day and wanted to make it so badly. It was quick and easy too!

Sorry I don’t have more pictures of this yummy lunch but I made it with the kiddo’s home pretty quickly, I was lucky to get a final shot of this pretty lil dish!!
