Ingredients:
1 lb of Chicken Breasts
10 Oz. of Spinach
1 Cup of Low Fat Yogurt
1 Onion, Diced
2 Cloves of Garlic, Minced
6 Oz. of shredded 2% Cheddar Cheese
Italian Seasoning
Salt & Pepper
Directions:
In crockpot spread onions on the bottom. Season chicken with salt, pepper & Italian seasoning. Next lay the chicken breasts on top.
Mix together the yogurt, garlic and spinach together and pour over the top of the chicken.
Let cook on low for 3-4 hrs.
Sprinkle in cheese and stir gently
Once all cheese has melted, Remove chicken carefully , scoop a spoonful of the mix and place on top. Serve with rice, noodles or crusty bread!
