The bite of Dijon mustard and the piney fragrance of rosemary give this grilled dish a punch of flavor reminiscent of the Mediterranean. I found it on www.allrecipes.com. I altered a few things to my liking but not much!
Ingredients
2 tablespoon olive oil
2 tbsp. fresh rosemary
salt
black pepper
4 (6-ounce) skinless, boneless chicken breast halves
Cooking spray
6 tablespoons light sour cream
2 tablespoon water
Preparation:
Prepare grill. I will be trying this one on the grill this summer! Or Preheat Oven to 350 and line a sheet of tinfoil sprayed with cooking spray. I baked mine in a casserole dish. I sprayed it with non-stick spray and put 2 tbsp of the mustard and spread it over the bottom of the dish.
Place the chicken on top of the mustard in the dish. Combine 2 teaspoons mustard, oil, rosemary, salt and pepper in a small bowl.
Brush evenly over chicken. If grilling I would just combine the 4 tbsp. of mustard with the rest and make sure you brush both sides.
Cook for 15 min at 350 (I used chicken cutlets, if you use chicken breasts the cook time will go up) While the chicken cooks, combine 1 tablespoon mustard, mayonnaise, and 1 tablespoon water in a bowl.
Finished product!
Serve mustard cream over grilled chicken.
I served this dish with a Marinated Tomato Salad & a Tuscan Risotto (boxed).
