Breakfast Casserole – #CrockPot Challenge Day 2

I’ve always wanted to make breakfast in the crock!! So when thinking about my Crock Pot recipes for this challenge I went on a search!! The thought of putting something in the Crock and waking up to breakfast gave me the warm fuzzy’s, no really it did. Once upon a time ago, I could never do this because it requires you to put it in between 11 and 12 at night and who wants to stay up for that? Or who wants to actually prepare food that late at night. Then this lovely blog was born, and I started to “need” the time at night to unwind and zone as I like to call it. So my nice and early bed time of 10PM has slowly become 11 or even twelve recently. I know I’m crazy but I long for that time alone at night. When the CPC came up again I knew this one was going to be on the list! Don’t forget the lovely ladies who are participating in this challenge with me….keep scrolling!!

Crock Pot Breakfast Casserole

Recipe Inspired From: All Kinds of Yumm
Serves: 4-6

Ingredients:

  • 1 bag frozen hash browns or potatoes (I used simply potatoes & onion, it was partially thawed)
  • 6 eggs
  • 1/2 cup skim milk
  • 1 16 oz. ground sausage (I used Jimmy Dean’s because you can buy Turkey Sausage and it’s 60% lower in fat, comes right in a bag, it’s pre-cooked and there was no measuring)
  • Salt and pepper
  • 16 oz. bag part-skim shredded cheddar cheese (I used half cheddar and half mozzarella) 
I didn’t take too many pictures because, well it was 11:30 at night, but the good part was because I chose to use the Jimmy Dean sausage, it’s already cooked so I didn’t have to actually cook any sausage first. If you don’t care about the amount of fat buy an Italian kind and cook it through.  I also would add some things to it next time like maybe some peppers or tomatoes. I’m going to tell you to cook it in less time than I did,  it dried out a little too much, don’t get me wrong I still ate it for breakfast at least 3 times last week, but this is how we learn. Or how about breakfast for dinner??

First I placed the semi-frozen potatoes on the bottom of the crock pot. I added the sausage on top. Then sprinkled the cheese on top.

I cracked and scrambled the eggs in a separate bowl. Added in the milk and scrambled it together.

Pour the egg mixture all around the crock pot. Stir everything together, stir it good to get the egg all the way through.

Cover and cook on low for 6 hours. I know what your saying, who wants to put this on at 1 am to have it ready for 7 am, well not me, luckily my husband is up at 4am so I can always have him shut it off, always think about those options too! It was so nice to have breakfast ready that morning.

We had a busy day ahead, soccer for boo, kickboxing for momma, it was nice to just dig in!! Believe it or not it sliced really well with a spatula! Formed a nice slice for myself.

And yes I did have it three other days!! Package it up and your good to go! No judging my pics, 11 pm on a Friday night + a few glasses of wine = tired momma.
