Beef Tenderloin Crostini Final5These Beef Tenderloin Crostini’s will absolutely melt in your mouth. They may look difficult to make but trust me they are not! Serve them at your next Summer gathering and you’ll see how fast they go.

My mom has had some time off this Summer. We’ve had so much fun cooking, preparing and just enjoying food for the first time. I can honestly say you wouldn’t have found me in the kitchen  before I had kids. So this time with my mom has been so fun and special to me. She is one of my biggest supporters of my wanting to feed my family unprocessed healthy dishes. So when I decided to enter a contest sponsored by  Certified Angus Beef ® brand you know she was on board with helping, watching and the sampling of course! My mom has been in catering for over 25 years when I have a question about recipes or food she is my go to gal. We had so much fun just sitting on the deck, sipping on wine and creating these amazing Beef Tenderloin Crostini’s. Let the grill do the work!!

Author:
Recipe type: Appetizer
Serves: 2 dozen
Ingredients
  • 2 Vidalia onions
  • 1 pound of Certified Angus Beef® Tenderloin (used almost 1 pound, 2 separate filet tenderloins)
  • 2 ounces of garlic and herb cheddar cheese
  • olive oil
  • salt and pepper
  • 1 loaf of small Italian bread
Instructions
  1. Light the grill and set to a medium heat of 350F. Slice the onions and place them in a square aluminum pan. Drizzle olive oil and toss to coat all of the onions. Cover with tinfoil and set on the grill.
  2. Cook for an hour occasionally shaking the pan to allow the onions to caramelize. While the onions cook, slice the cheese into thin small strips.
  3. Season the beef with salt and place on the grill. Cook on each side for approx 8 minutes, depending on your desire of doneness.
  4. Pull the onions off the grill and place aside. Slice the bread into small rounds and place on top shelf of the grill, lightly toasting them. Remove and place on a serving dish spreading them out. Place a piece of cheese on top of each round. Slice the beef into small chunks that will fit onto each round. Place a piece of beef on top of the cheese. Top with caramelized onions and place a toothpick in the middle of each bite.

Trust me when I say these little bites of Beef Tenderloin Crostini’s will absolutely melt in our mouth. These were meant to be an appetizer the night we made them and it quickly turned into dinner for the whole family!
