So I’ve always been a bit fancied by salads that look pretty. Salads that have everything all laid out to make a beautiful presentation that will have everyone running to the table. However for this kind of salad spread I’d have to say it’s kiddo-free for my family. My children barley eat vegetables never mind a salad, but they are 1 and 4 I get why it’s not very appealing. So on nights when I crave a pretty looking salad, I arrange a date night for my husband and I. I always make the meat throughout the day to get it ready and then I arrange the rest of the ingredients on my serving platter and keep it in the fridge until the kids are in bed and the chicken is ready. I add the chicken last so it’s warm, top with your favorite cheese and dressing and you have yourself a healthy dinner for two!
I chose this recipe for our budget friendly theme these week because I believe this can be a very filling and healthy dish at a very low cost. If you serve this during the months where you have a garden of tomatoes and cucumbers out back it can be even more cost efficient. Ingredients:
1 can of black beans, rinsed
2 large chicken breasts
3 cups of Lettuce, roughly chopped
3 cups of Spinach
1 can of green chili’s
1 small can of blake beans, rinsed
Red Pepper Flakes (optional)
1 large tomato, chopped
1 small cucumber, chopped
Shredded 4 cheese blend, optional
Red Pepper flakes, use the amount you like
1 tbsp. Chipotle seasoning
Directions:
Place the chicken in the bottom of the crock pot, pour green chili’s on top and sprinkle with red pepper flakes and chipotle seasoning. Cook on low for 5-6 hours.
Place chopped lettuce on one side of a large serving dish, place the spinach on the other end.
Once chicken is done, remove from crock pot and shred. Add it next to the lettuce. Then add the tomato, cucumber and black beans.
Serve with my low fat Healthier Dijon Viniagrette or Light Chipotle Ranch Dressing and some shredded cheese and you won’t be disappointed.
