Another week come and gone! The only difference between this past week and any other normal week for this clan is my baby is now two! OMG I have a two year old! Never thought I’d say that! Our Elmo birthday party was a great big success! I even had fun putting it all together.
My baby girl deserves nothing but the best. She had so much fun, I honestly don’t ever remember seeing her have this much fun before, she wasn’t shy, she was indeed very out going, she play with all of her friends, I got a chance to actually talk to all of my friends and my family. Here is how our Elmo party went!
We had it at the clubhouse in our condo complex and my best friend, aka Aunty Shelby helped me set up, hopefully next year we will be celebrating the big 03 in a new home!!
How cute is my birthday girl?? Here she is with all of her girl friends. I can’t tell you how much it means to me to have friends that have kids around the same age so my baby girl gets to grow up with the same kiddo’s!
Yes that is a new big girl bike!! Thank you Aunty TT for spoiling me rotten š She loves it and has already gone for a few bike rides!
So after a long day we packed all the new toys and cloths up and headed for home. We all slept like babies that night but MM woke up with a little head cold the next day, but played with new toys and still had a good day. Here she is playing with her new blender Mommy got her so we can cook in the kitchen together, how fun will this be!!
Daddy wouldn’t let Mommy do anything around the house, no cleaning, no cooking, no nothing, I had a hard time at first but then after a few hours I said you know what, I’m going to suck this up while I can and I even laid down in bed and watched TV for a few hours while she napped, which I NEVER do. It was nice, then we ordered dinner out! Ā Had a nice warm bath and here is my birthday girl in her new PJ’s!
So what else is new?? Well I made a new soup last weekend. One you HAVE to try. I actually got this from a fellow #SundaySupper friend, she posted it for a theme called Comfort Food. It’s Supper for a Steal’sĀ Loaded Baked Potato Soup. Thank you Lane for sharing such a great recipe, I ate this for lunch 3 different days and even added a little broccoli to change it up a bit one day! So simple and so warm and comforting!
Loaded Baked Potato Soup
8 medium Russet potatoes, peeled and cut into 1ā cubes
1 medium onion, minced
4 cups chicken broth
3 cloves garlic, minced
Ā¼ cup butter
salt
pepper
1 cup half and half
1 cup shredded cheddar cheese
2 tsp dried chives (or 1 tbsp fresh)
Sour cream, crumbled bacon, additional shredded cheese, for topping
Combine ingredients potatoes through pepper in the crock pot. Cover and cook on low for 8 hours or high for 4 hours.
Using a potato masher, mash soup together until you have reached your desired consistency.
Stir in cream, cheese, and chives. Ā Also add more salt and pepper at this point too. Let it sit on warm, uncovered for 15-30 minutes to thicken.
Mix well and serve. Top with sour cream, bacon, and additional cheese if desired.
Any vegetarian friends can sub vegetable stock for chicken stock and leave out the bacon. Enjoy!
