Happy Friday everyone!! My Featured Friday hiatus is officially over!! I’m so happy to at least have 5 more wonderful blogs to introduce you to for 2014, I’m already working on finding others but for now let me introduce you to Amy, she blogs over at The Savvy Kitchen. She is a newlywed, well she got married in 2012, to me that is a newlywed!! She currently resides in Northern Virginia and though Amy does market research for the government (sounds cool!) her passion and joy is being in her kitchen.
Amy comes from a large Italian family and between them and her husband she has quite the taste testers! She tries to cook mostly low-calorie, low-carb and gluten-free meals to accommodate the diet restrictions of her friends and family. Amy learnt to cook from her mother and hopes to someday cook just as good as she does, so she turned the Savvy Kitchen into a place where she can share her journey with…………well everyone!! Aren’t we lucky! Here is my cute little helper who has really wanted to get into the kitchen lately!
Let’s talk food people! I read over Amy’s recipes for a full day, I mean every free chance I got while the kids were busy I was on my phone clicking away looking for just the right recipe to make (you going to laugh with what I did end up making!) it was the day before New Years so I was looking at her appetizers because I was making a few for my husband and I for New Years Eve. Her Chili Con Queso inspired me to make a Nacho Dip, I couldn’t make her recipe because I didn’t have everything in the house and I didn’t want to go back out, but thank you for the inspiration because it turned out to die for and I’ll be sharing that one soon because I made it right in the crock!! OMG her Overnight Oats in a Jar, I’m on this one. Literally on it. I got mason jars for Christmas and well I love oatmeal so I love the idea of it being ready for me when I open the fridge, I’m on the go at least 3 mornings a week to get my daughter to school and by the time I get home I could pass out from hunger, this is something I can eat quickly while she eats her breakfast and I pack the car up! Or……maybe I could get her to eat some……hmmmm. Amy’s Sesame Quinoa caught my eye because I’m always looking for a way to “dress up” quinoa! I love making quinoa dishes for lunch because my husband doesn’t like it. The other dish I almost made was Amy’s Parmesan Risotto. We’ve been crazy with the holiday’s, vacations, sicknesses and more sicknesses the last few weeks resulting in an ER visit that I haven’t had much time in the kitchen, well not much enjoyable time, plus our oven shot out on us this past weekend and we are currently waiting for a part to come in so I’ve resorted to crock pot cooking for the next few weeks. I will be making that Risotto though because I haven’t made one in awhile and I love love love Risotto!!
OK so what did I make??? Well, lets rewind about 6 years when my husband and I went on a camping trip with friends. One morning, after quite a few drinks the night before, we were all craving a greasy, filling, hearty kind of breakfast. So our friends hopped on their jet ski, drove across the lake, and came back with the most incredible Breakfast Pizza I’ve ever had, actually it’s the only breakfast pizza I’ve ever made. I’ve always wanted to have another one but never had the opportunity, fast forward 6 years to now, I’m scrolling through Amy’s recipes and bam!!! Breakfast Pizza was on her menu!! Gosh darn straight I was attempting that bad boy! I actually made it exactly the way she did because I liked her choice of toppings and I knew my husband would too. My picky toddler even had a few bites, Amy that is a compliment lol! I’m a organized person, if you know me, you know this already, but I’m the same way when I cook. I have to get everything together and ready to go so when I get to certain points in the recipe I’m ready to roll! Here is my cute little helper again, look at those cute little chubby hands!! Love this girl.
That’s her knife she likes to use. She helped me put everything on top of the pizza and loved helping Mommy!
She even liked watching the pizza cook from the oven. By the time I pulled it out she had moved onto other things! That’s my girl. However my mouth instantly started drooling when I saw it! I’m glad I decided to use the montrary Jack Cheese I had leftover from Christmas, It was in chunks and not shredded so I wasn’t sure what to do but I just diced it up and scattered it on top of the pizza, it really made this complete I must say!
A glass of orange juice and two pieces of this bad boy and you’ll be starting off your day just right!
