I made this up one night because again we get bored of just plain brown rice and it helps to have veggies thrown in there, I must say it was very tasty and it gave me a mexican feel so that’s how it got its name! Very simple to just add a few things to make it different. I would serve this with any mexican meal, how about the Chicken Enchilada’s!! Now there is an idea!
Ingredients:
2 bags of brown rice
14 oz of diced tomatoes (again I use DelMonte because they have a garlic flavor)
1 small onion, diced
1/2 of a 15 oz. can of corn (or frozen)
1 tsp. Cumin
Preperation:
Cook the rice according to the pkg directions.
Once the rice is cook at it to a fry pan. Add the diced tomatoes, onion, corn and sprinkle with the cumin, toss it enough to mix and warm everything.
