Strawberry Banana Ice Cream #21Day Fix

I have to admit I was so hesitant in making this recipe. It only has two ingredients so I wasn’t hesitating on the degree of difficulty I was hesitating because I never thought you could make ice cream in a blender and have it actually taste good! Getting my kids to snack on something that doesn’t come from a box or a bag is something I’ll never give up on so when I figured why not give Strawberry Banana Ice Cream a shot since they love strawberries and banana’s at this present time. The only difficulty I had was holding down the blender when I actually hit the blend button. It felt and sounded like it was going to explode. Drew chose to color in my office with the door closed because he thought it was too loud. I did end up adding a tablespoon or two to make it a little smoother. I also doubled the ingredients because I wanted to see how it would freeze but I recommend blending in batches if you choose to make more because I ended up having to separate it anyways, it just wouldn’t blend! Just keep scraping down the sides and keep on blending.

It actually tasted like ice cream and the kids devoured it. It made a great afternoon snack for three days. It’s a great way to use up those Florida Strawberries I speak so highly of! It also froze really well too. I just put all of the leftovers after our first snack in an airtight glass jar. When they were napping the next day I moved it to the refrigerator and it was the perfect texture once they woke a few hours later. They even declined chocolate sauce! Imagine how happy that made me because I thought I was going to need it to get them to even try it.

Ingredients
  • 2 medium ripe bananas, peeled and cut into pieces
  • 4 strawberries
  • 1-2 tbsp. of almond milk (optional)
Instructions
  1. Chop the greens off of the strawberries and place them in a ziplock bag. Place the banana pieces in the bag and freeze for at least 4 hours.
  2. Place the strawberries and bananas in a blender (or food processor) and blend until smooth. Add 1-2 tbsp of almond milk for a creamier texture.
  3. Serve immediately and freeze the rest.

    1. You’ll love it! I can’t believe how much it tasted like ice cream. 0 guilt! I love 21 Day Fix and will probably change out between that and other beach body ones all my life! I have a shakeology dessert here too 🙂 Enjoy and good luck!

  2. Sorry newbie question. It says 2 purple containers but because it’s two servings it’s one purple per serving right? Just started 21 df and want to make sure I’m understanding it – I’m so used to counting calories that this is a major habit change for me but in a good way. I have to find a way to get more purple so I’m determining this to be two purples if I ate it all. Thanks!

      I can see where this may look confusing so I updated it! Autumn’s recipe states 2 purples per serving. Sorry about that. It’s because the banana is considered one container and the strawberries is considered the other. Trust me when I say it’s worth it! Enjoy and good luck!
