Friday Friday Friday!!! Hello Hello!! Another Friday upon us friends! Some of the time I have to really think about how I came across the blog that I’m featuring each week. Well this is one of those weeks. Becky joins us today from So Very Blessed! Welcome Becky! Like me Becky loves and adores food, feels drawn to take pictures of it and yes her kitchen is her happy place too!! She is a married lady, her other half is Daniel and they share two adorable pups called Roxy and Boots, too cute! Becky lives in Arizona and spends her day as a Sign Language interpreter, she finds her hands constantly signing away even if you don’t know it, so she sits on them often HA! She hopes once her husband finishes school they will get to move back home where her family resides in Colorado. I honestly have never met another person who dislikes soda! So when I got to know Becky better from her blog I couldn’t believe it!! I’m not a big fan of carbonation either!! I bet if we hung out we’d get along pretty well because Becky is planner too!!! However not so much since the kiddo’s came along, can only plan so much without a poopy diaper or tantrum to throw us all off LOL…..Anyhow I’m so glad to be featuring this lovely little blog today because she’s got some great recipes and yes I tried two, and I had a friend eat both of them too so Becky gets two reviews today!
Another thing about Becky’s blog I love too is she talks about her weight loss journey and I really really enjoyed her latest post called, “I’ll always be the fat kid.” That one was touching. She’s also got some great Party idea’s too, like her last minute Ranch Party her family through together, how super cute is that and OMG I’m so making her BBQ Sliders she made for this party oh my yumminess, she was actually an inspiration to me this week because this recipe gave me the idea to have a “Sliders” bar at my very first annual Cookie Swap I’m holding for some close friends next month, thanks girl!
OK so lets talk Recipes. This girl had my mouth watering before I even got past the Appetizer & Sides section! I’m actually making her Loaded Baked Potato Casserole tonight with my Ham however I won’t have time to write and take pictures of it so I’ll just update you all on it later! I just wish I had bacon……..oh sweet bacon. I’d like to try her Roasted Rosemary Sweet Potatoes and Chicken Sausage, we love sweet potatoes and I’m always looking for a new way to serve chicken sausage, plus something about rosemary that is just awesome! Her Turkey Spinach Meatloaves. Great way to add some veggies in there for my picky one!
Now onto what I did make 🙂 I had a play date scheduled with a friend of mine to get together and catch up, our sons are only a few months a part so it makes for a cute morning together. I wanted to bring lunch so I chose two dishes of Becky’s that I could make a head of time.
First was her Creamy Egg Salad. Mmmmmmmm I haven’t had egg salad in ages, I did substitute light mayo for the miracle whip which I thought may take away from the taste (but it didn’t) and I took 4 yolks out to make it a little healthier and I used green onions instead of chives because it’s what I had on hand. OMG!! The sweet pickle relish……it made the dish! We have a farm down the street from here that sells homemade stuff and my mom had bought my husband some sweet pickle relish because he loves it, well it was the perfect addition to this dish.
Serve it over a salad, make yourself a sandwich or eat it whole like I did when my sandwich was finished and some had fallen out of it!! Mine made 4 large sandwiches. This. Will. Be. Made. Again.
My friend asked if it was on my website and I said it would be Friday, well she texted me later that night asking for it early because she wanted to make it for her and her husband! I’d say that’s a great review Becky!! And I got to send someone over to your site 😉 Bonus!!
Now that is a sandwich! I use the Arnold’s Whole Wheat Sandwich buns 100 calories each! Beware……it will fall out! 🙂
The other dish I made to go with this very sandwich was her Greek Quinoa Salad. Love Quinoa, love the amount of protein in it and I can make it in the microwave with my Pampered Chef Steamer in 10 min! We had a little on the side (hey better than chips!) and then the next night I had a bigger bowl and had it for dinner as is!!
I will be making this again as one of make ahead dishes I make for my lunches for the week. So simple, my friend is so intimidating by cooking but I told her if I can cook, anyone can cook LOL!! I waited to add the feta until the end so it wouldn’t get soggy but I bet it would have been just as good if I had premixed it!!
