In attempt to try some fun recipe switches with other food/life bloggers I’m researching on exactly how to do that so let’s give it a shot. This is from Shannon’s site Home of the “What’s Cooking Wednesday” http://shanrev.blogspot.com/search/label/What%27s%20Cooking%20Wednesday This is a tried and favorite recipe and I chose this one because it’s been tried by others and loved as well! What’s better than an easy lasagna you can make and leave for the day!!??
Ingredients:
- 1/2-1 pound lean ground beef
- 1/2 onion, chopped
- 1 teaspoon minced garlic
- 1/2 (29 ounce) can tomato sauce
- 1/2 (6 ounce) can tomato paste
- 3/4 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 (12 ounce) package lasagna noodles (Use Smart noodles or whole grain)
- 6 ounces cottage cheese (Reduced Fat)
- 1/4 cup grated Parmesan cheese (Reduced Fat)
- 1/2 pound shredded mozzarella cheese (Reduced Fat)
Directions
- In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through.
- In a large bowl mix together the cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese.
- Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used.
- Cover, and cook on LOW setting for 4 to 6 hours.

AUNTY’S VERDICT:
She thought it was a bit dry, thought maybe she over cooked it, maybe, I remember having ALOT of sauce in mine so it could be anything, but every review counts, also it teaches us what to watch for so in this case watch to see if it’s over cooking!
MY COUSIN’S VERDICT:
She thought it was super good!! She loved it too….
THIS MOMMA’S VERDICT:
OMG IS ALL I HAVE TO SAY ABOUT THIS RECIPE!!! I followed it to a T, for the tomato sauce I really recommend either using your own homemade sauce or buy a flavored jarred kind, I used Newman’s Sausage & Peppers. If you use just plain tomato sauce I don’t think it will have the taste this one did! That’s my only one recommendation!! Mine cooked in just under 3 hours. It was very simple to put together, the recipe calls for you to put the sauce and paste into the hamburger mixture when frying it however I did not because my pan wasn’t big enough, all it wants you to do is mix it so you have it all together to make the layers so I just used a large bowl, put my sauce, paste and seasoning in that bowl and poured the cooked meat into that bowl, mixed it and then used that to make the layers. SO EASY!!! And I have lots of leftovers!
The lasagna was delicious! I had to use gluten free noodles due to my allergy, but everything else was the same. I Put it on at 10am and went to bed from my night shift. I checked on it at noon and the noodles were already cooked (at that time I should have put it to warm but I kept it going on low until 3 when I woke up). The top layer of noodles were hard but I just took those off and the rest was amazing! I used the same sauce as Tammi, the newman’s sausage. I asked my husband if he wants to add it into our “regulars” and he said yes!
Ahhhh yes my crock cooks really fast too!! Glad you were able to eat around the hard ones LOL!! Glad Jim enjoyed too!! So glad you tried it out!

Nancy Moreira Williams: I made a similar recipe about a week ago and was very skeptical about the uncooked noodles. Don’t be! It turned out super yummy and just right. Will definitely keep this recipe!
Misty Matamoros Baker: Made it and well was a little disappointed but perhaps because I have 7qt CP. I cooked for 5 hours and it burnt. I only had 2 layers of lasagna because I ran out of meat mixture. It was still edible. I will tweak it next time around, it’s still a keeper! even my 2.5 yr old still ate it. 🙂
Sherry Bradford Komosinski: I made this today…..came out great! I used a 6 qt. crockpot and only cooked it on low for 4 hours. Took the insert out and let it sit for an hour so it would settle. I used 1.3 lbs. of ground beef and the whole cans of sauce and paste. Next time I make it, will definitely need more of the cheese mixture….the cheese layers were rather thin.

Marybeth Clark: Made this last weekend. I used a jar of pasta sauce, ricotta cheese, mozzarella cheese and ground meat. Was very good and the noodles were perfect. I cooked on low and was done in 3 hours – just a little burnt on the bottom though.
These comments were made from my Facebook group, and I did go in and change the measurements to be able to make 3 layers! 🙂
