I really experiementd a lot with Soup a lot this past winter, I just could live on any soup, I could make a big batch and eat it for lunch and dinner all week if I had to. We were sick a lot this winter so I froze a lot of soups and had it whenever we got sick!! This one was one of my favorites! Ingredients:
1 lb. ground turkey (93% lean/7% fat)
1 cup chopped onion
1 tsp minced fresh garlic
28 oz. can diced tomatoes with juice
6 oz. can tomato paste
4 cups low sodium chicken broth
3 cups chopped green pepper (I had red & yellow still was awesome!!)
2/3 cup uncooked rice (white or brown)
2 Tbsp brown sugar, packed
1 tsp dried basil
1/4 tsp ground cinnamon
Ground black pepper to taste
All you have to do before popping everything into the crockpot (except the rice) is saute up the onoin and garlic.
Add in the Ground Turkey.
Place it in your crock. Cut up your added veggies.
Place everything else except the rice into your crock. Cook on low for 3-4 hours, 45 min before it’s ready throw in your rice.
Cook until your rice is ready (don’t turn it into mush like I did the first time) OMG it tasted like a stuffed pepper! YUMMY!! Of course I added cheese, what’s a stuffed pepper without cheese!
