Here is how my evening just went. Now I’m not going to lie and say that I don’t sometimes (a lot of the time) look forward to 7pm, sometimes even 10pm because then both my babies are sleeping (yes my daughter and husband) This does not mean I don’t love my daughter, but it does mean that I’m exhausted and I’d like to do a little thinking for myself. Though that thinking is usually what meal I’ll be making the next day or what Madison’s birthday party will be themed as next month. Ugh…ok I was running off topic there for a minute. See how fast that can happen.
My husband is our bedroom, I’m in the bathroom (probably peeing for what may only be the 3rd time today) now that is literally 10 feet away. Not to give you a visual of me going to the peeing or anything but any mother can relate to this. I’m doing my business, I see the cat food (yes we keep the cat food in the bathroom. Don’t ask.) I see lots of drenched dry food absorbing, floating around in the water dish. I just chuckle to myself. I reach for the toilet paper, it’s gone. No not husband didn’t refill it the last time he used it gone, but gone gone. No spindle, no nothing but the holder anchored to the vanity. I glance around, I don’t see it in the garbage, or the toy holder where we keep her bath toys. I turn around, no tissues left of course. I then see the spindle to the holder in the potty chair. (luckily we haven’t potty trained yet so it’s not like it was emerged in anything). I chuckle to myself…again.
Mommy: (yelling) “Hey we got any toilet paper in this place??!”
Daddy: (yelling) “It’s in the sink!”
I look towards the sink (thank god my bathroom is small and I can pretty much reach anything while sitting on the toilet huh, if you were wondering, yes it’s because my bathroom is small.)
Mommy: (yelling) “Thank You!!!!”
Typical moment here in the Forcier household. I love the times where I chuckle. I love when I have such a good day that those little irritating things make me chuckle. Now if I had a bad day, It most likely would have gone this way:
Mommy: (really yelling) “What the heck did she do with the toilet paper now??!!!”
Daddy: (yelling) “I had to put it in the sink!”
Mommy: (really yelling) “Well you could have easily put it back afterwards. Or you could have easily told me that when you were finished with it!!!”
Mommy: (grunting to herself) @(*W)(*W(*E)(W*&^%*$(#,=. (Those aren’t nice words)
See what difference a good day can make from a bad day?? 🙂 Last night I vowed that I would have better good days. Do you ever promise yourself that? OK well maybe I do on a daily basis, but hey, whatever works. I love random chuckles!
Today went a little something like this:
On Monday, Wednesday, Friday’s and Sunday’s I like to cook a big breakfast, big but not too much work. Here is my famous Cinnamon French Toast. Easy guys………real easy.
2 scrambled eggs
1 egg white
Splash of skim milk
As much cinnamon as you please
3 slices of whole wheat reduced fat bread
Scramble it all together, dip your bread, fry it, flip it, serve it with your favorite fruit and be done. I don’t use syrup because I try to cut down on the sugar, though butter is no better!
Then it’s not long after that, that Miss Madison is on the go, so off we went to the park down the street. She loved this one particular slide the most, yes it was a few times before this momma was ok with not putting her hand directly under her bum when she climbed, I’m not a hovering parent by no means but these steps were big! She ate her lunch on the bench and then we headed off to the Farm Stand where she helped me pick green beans, tomatoes, apples, zucchini and broccoli!
Then it was nap time. Just enough time for this Momma to pop our dinner into the crockpot, clean up, eat lunch and shower before she was up. Then we moved onto play dough time, coloring and Music with Elmo.
I planned on doing my steak tips in the crock with cream of mushroom soup and fresh mushrooms but I only had cream of chicken in the pantry and no fresh mushrooms, so I made up my own creation and I must admit it was tasty. So I figured since it was quick and easy I’d share it with you.
1 pd of Steak Tips (just got the cheap ones at Hannaford’s)
1 Green Pepper, Sliced
1 Red Pepper, Sliced
1 Pkg of Onion Soup Mix
1 Cup of Broth
1/4 Cup of Water
Garlic powder, salt & pepper
2 Large red potatoes
2 Tbsp of Flour
Season Steak tips with garlic powder, salt and pepper and place them on the bottom of the crock. Place sliced pepper on top. In a separate bowl mix the broth, water and dried onion soup together. Pour this over the veggies. I then cooked it on low for 3 hours. That’s when I discovered this:
Well I planned on making mashed potatoes with this, it is awesome because of the gravy that you make from what the beef cooks in. However when I went to prepare them (thank god I prepare sooner rather than later) I realized I only had two red potatoes and not 4 like I had thought.
Soooo I chopped them up into bite size pieces, through them in the crock, added a little water, turned it to high and cooked for another hour and a half.
Then when I was boiling my corn on the cop I put the 2 tbsp of flour in a bowl and added about a cup to a cup and a half of the broth from the crock and whisked it until it turned into a gravy. This is what is AWESOME over mashed potatoes! It was still good with the roasted potatoes so I thought I would share…….
You think Maddie liked it? Well she didn’t, she ate corn.
