So when I received my book in the mail on Monday I couldn’t wait to sit down and glance through it, I didn’t know that I couldn’t do that, you actually have to sit down and READ this. It’s a must. I was drawn to it. I was addicted to it. I love the stories behind the recipes, I know I have a story for every recipe I make whether it’s a family classic from my childhood, a dish my grandmother made, or something funny my daughter did while I was cooking it. Β To sit down and hear another mom’s story behind her meals is just a fun way for me to pass time. A LOT of time. I’m only on like page 27 π That’s how much I love it because I have already stopped to make a few things. I set the fire alarm off while making Manholes the other day!!!
I searched through the book, thinking of what dish I wanted to make for today’s theme. I passed the pulled pork page and my mouth literally started watering! I was headed up to my summer camp for the weekend and I love cooking for my family on Thursday nights, they all work and by the time everyone gets here no one wants to cook. But silly me π So here is what I cooked up from Katie’s cookbook. Just the first recipe of many being cooked in my kitchen.
Hands-On Time: Β½ hour
Total Time: 4-5 hours
Serves 10-12
1 bone-in pork butt (5-6 pounds)
1-1Β½ teaspoons kosher or coarse salt
Β½-1 teaspoon black pepper
3 cups low-sodium chicken or beef broth
1 tablespoon liquid smoke
4 cups barbecue sauce (see recipe following)
Β½ cup cider vinegar, or more to taste
Sliced soft rolls, soft or toasted, for serving
Coleslaw and pickles, for serving (optional)
Pre-heat oven to 350 degrees.
Place pork butt in a large pot with a lid. Season with salt and pepper, to taste. Pour broth around pork until it covers about one-quarter of the meat. Add liquid smoke. Cover pot and put in oven.
Bake pork until internal temperature registers 190-200 degrees on an instant-read thermometer and meat is falling apart, 3Β½-4Β½ hours. Use a fork to pull at pork, and make sure it comes apart easily. Remove pork butt from oven and let it sit in pot 15-20 minutes. Remove from pot, and discard bone and cooking liquid. Cut fatty parts off meat, then use two forks or your fingers to shred meat into small pieces. Place shredded pork in a large bowl.
Warm barbecue sauce in a small pot over medium heat. Mix shredded meat with barbecue sauce and vinegar until evenly coated. Taste. If pork could use a bit more zing, add more vinegar, to taste. Season with additional salt and pepper.
Pile pulled pork onto rolls, or serve it plain with coleslaw and pickles.
It such an amazing taste. I ended up using our favorite BBQ sauce but I liked how it was cooked in the broth first and I did add the cider vinegar at the end as well. Everything just came together real well. I served it with a Coleslaw that I made after much thought and playing around with a few different recipes. And of course pickles!! Have to have pickles! Even my sister who was never a pulled pork fan loved it. I’ll take that as a compliment.
This dish also traveled well because after it had cooked I stuck a piece of tinfoil on it and popped it in my truck and off we went to our summer camp (35 min away) when I got here I shredded it and let it sit in the BBQ sauce for a bit. I love these sandwiches!! Oh and to top this all off. Katie had this recipe posted in the Wall Street Journal. Check it out π

Yeah…pulled pork is pretty fab! This one looks so good…I have this one flagged to try from the book very soon. We have a family reunion next month, and this may be what I make.

I wasn’t lucky to get the book, but after reading everyone’s reviews, I want it! I’m always bringing dessert, so usually cupcakes or cheesecake (if it’s a friend’s house with refrigeration).

Cookies is great, I remember my grandmother always brought cookies in a tin that is probably older than her, it was her “thing” and when she passed away last year my mom took the tin π
I love pulled pork-it’s such a great summer dish. I like how you put cole slaw on top of the pork-it makes it look amazing and I’m sure it added a tasty crunch as well!

Yet another recipe I will have to try Tammi, thanks π So my fav portable dish would have to be my pasta salad- I use tortellini and ziti and I have to say the tortellini and 3 cheese italian dressing totally make the dish! **Here’s hoping I win the cook book π
