Protein Packed Egg Salad
This egg salad isn’t your normal egg salad my friends. It’s packed with protein, you have to give it a chance because when you hear the ingredients you may not be interested. Do you trust me? If you like egg salad, or even if you don’t but your looking for a protein packed lunch, give it a try! I don’t remember how I came up with the ingredients to be honest, I think it was during my I LOVE cottage cheese time. Then, like with a lot of other things, I ate it so much I got sick of it. I love cottage cheese but it’s an acquired taste to say the least. It’s plain, I used to add fruit and shaved almonds to mine for a quick breakfast or snack.
I love that it’s loaded with protein. I eat hard boiled eggs a lot for a go to quick breakfast or snack so I said why not combine two of my favorites, add some other small ingredients in and wala a protein packed egg salad!

If you are someone I know, then you’ll know that I DESPISE mayo, gosh my stomach curdles just writing the word. This is a great way to take out the usual mayo from an egg salad recipe. Which is a bonus because we all know how much fat is in mayo! Just trust me, even if you don’t like the texture of cottage cheese but you like egg salad or even hard boiled eggs give it a try.

There is even a secret ingredient that is even more “odd” than cottage cheese. CURRY POWDER! I always try and add curry powder or turmeric into certain recipes where you really can’t taste too much of it, like chili’s and soups, I added curry powder into this protein packed egg salad to help with the egg salad color I like! Mix together:
4 hard boiled eggs, including yolks
1/2 cup of low fat cottage cheese
Sprinkle with salt and pepper
2 tbsp. of diced red onion (more or less given what you like)
1 tsp. of Curry Powder
2 tsp. of dill weed
This makes enough for probably 3 sandwiches, I sometimes add more eggs, it’s a recipe you can adjust to your own tastes the two major ingredients are obviously the cottage cheese and hard boiled eggs, sometimes I hold the onions and add relish, I even top mine with sliced tomato and cheese, It’s one of my weirdest combos but I love it! I have it between toasted bread here, but sometimes I like to make it in a wrap, or even eat it with a spoon or with crackers.
