I found this recipe in a new cookbook I got for Christmas this year. I have to admit it sounded a bit “weird” when I first read the ingredients but then I realized……hey I like everything in it so why wouldn’t it work! I was looking for a change up, something light to have for breakfast, and then I realized it could also be for lunch or a snack too! So when I made it, I originally had it for breakfast, then I had it for lunch the next day, then I had it as a snack the following day! That is a Win-Win-Win in my book! The celery and walnuts gives it just the bit of crunch you need!
What you’ll need:
2 Pears, diced
1 cup of low fat cottage cheese
1/4 cup of glazed walnuts or pecans, chopped
1/2 cup of red grapes, chopped
2 celery stalks, chopped
How to make it:
Mix the above ingredients leaving a few of the pecans out. Refrigerate and sprinkle with remaining pecans when ready to serve.
