Nunney’s Super Mac N Cheese for #SundaySupper

Nunney's Super Mac N Cheese is loaded with cheesy goodness and veggies!

I’m not sure how my Mom came up with the name Super Mac N Cheese but when deciding on what recipe to make this week for The Sunday Supper Movements theme of Grandparents Day I knew I had to finally make this dish. I grew up eating this cheesy goodness and it has become a staple at every family party or holiday gathering. Since my kids LOVE Mac N Cheese I decided to call it Nunney’s Super Mac N Cheese.

I have plenty of memories of my grandparents cooking. I did not gain my love for cooking from them unfortunately. I remember watching my grandmother in the kitchen growing up,  I assumed she was doing “what she was supposed to be doing.” Cooking for her husband, my grandfather and us kids. However, now when I think back, she put that apron on with a smile, whipped up her homemade sausage on Christmas morning and always had her Broccoli Casserole on the table for Thanksgiving. She truly enjoyed cooking I just never saw it as a kid. When she passed I picked a few things from her kitchen including this very casserole dish. Every time I cook with it I put my apron on and smile.

I remember the smell that would waft down the hallway when my Mom was making her Super Mac N Cheese and now that I am a mother I can truly appreciate any dish made from scratch and any recipe that has veggies that can be easily hidden! Apparently I’m not the only one constantly trying to get my kids to eat their veggies! My kids are normal kids they would prefer all of their food to come out of a box (don’t take it personally Nunney, I do not!) so you can imagine how happy I was the last time Mom made this and my kids gobbled it up! I think it’s earned the new name, Nunney’s Super Mac N Cheese don’t you? I warn you ahead of time, there is nothing healthy about this recipe, I wanted to make it exactly like she did growing up. I may have a new challenge though, make Nunney’s Super Mac N Cheese healthier! The best part about this recipe is Nunney was smart enough to make sure this serving is doubled! I got to freeze one for a busy on the go night when I just don’t have time to cook!

My Dad has been gone 15 years now so it made sense for her to be close to us so when the opportunity of a house with an in-law apartment came about. We were more than happy to merge our homes. We cook together all the time, I see my children’s face light up when Nunney comes home from work and we often exchange texts and messages of our favorite recipes we want to try. My family is truly blessed to celebrate Grandmothers Day and I can’t think of a better way than with her Super Mac N Cheese! This is a comforting and hearty dish passed down from my Mom. I grew up eating this cheesy goodness and now my children get to enjoy it.

Serves: 12
Ingredients
  • 16 oz box of elbow pasta
  • ½ cup of onion, diced
  • ½ cup celery, diced
  • ½ cup of carrots, shredded then diced
  • ½ stick of butter
  • ¼ cup of flour
  • 1 tsp of mustard powder
  • Salt and Pepper
  • 2½ cups of milk
  • 8 oz of cream cheese, cubed
  • 10 oz of shredded cheddar cheese
Instructions
  1. Cook the pasta according to the package directions in a large stock pot. Set aside.
  2. Preheat oven to 350 Degrees and grease 2 baking dishes. Set aside.
  3. In a large skillet or large stock pot melt the butter and add the carrots, celery and onions. Cook for 5-8 minutes until the veggies become soft.
  4. Sprinkle the flour over the veggie mixture and stir to coat them well. Add the cubed cream cheese and pour in 2 cups of milk. Whisk the cheese and milk mixture constantly until the cream cheese starts to melt. Once it starts to thicken pour in the last half a cup of milk and continue whisking until it's completely melted, about another 10 min.
  5. Pour the cheese over the elbow macarroni and stir to combine.
  6. Pour half of the Mac N Cheese in one baking dish and the other half in the other baking dish.
  7. Bake one of them for 30 minutes. Let cool for 5 minutes and serve.
  8. Let the other baking dish come to room temperature and freeze for another night.
