Meatloaf Cupcakes

Now my husband doesn’t like meatloaf, so I made this recipe without telling him what it was hoping the “presence” would do justice. I can’t take credit for it, it’s from Gina’s skinny recipes but here it is and let me tell you just how good it was!!! My 11 mth old daughter ate it and actually liked it, I served it to her with corn. For my husband and I, I served it with french style string beans. Give it a shot, seems really hard but it wasn’t and I enjoyed making it! I think it would be great for a dinner where you have friends over!
Meatloaf:
1.3 lb 93% lean ground turkey
1 cup grated zucchini, all moisture squeezed dry with paper towel
2 tbsp onion, minced
1/2 cup seasoned breadcrumbs
1/4 cup ketchup
1 egg
1 tsp kosher salt

Whipped Potato Topping:

1 lb (about 2 medium) Yukon gold potatoes, peeled and cubed (I used red bliss).
2 large garlic cloves, peeled and halved
2 tbsp fat free sour cream
2 tbsp fat free chicken broth
1 tbsp skim milk
1/2 tbsp light butter
kosher salt to taste
dash of fresh ground pepper
2 tbsp Chives

Directions:

Put the potatoes and garlic in a large pot with salt and enough water to cover; bring to a boil. Cover and reduce heat; simmer for 20 minutes or until potatoes are tender. Drain and return potatoes and garlic to pan. Add sour cream and remaining ingredients. Using a masher or blender, mash until smooth. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 350°. Line a muffin tin with foil liners.

In a large bowl, mix the turkey, zucchini, onion, breadcrumbs, ketchup, egg, and salt. Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top.

Bake uncovered for 18-20 minutes or until cooked through. Remove from tins and place onto a baking dish.

After the meat cooked I let it sit for about 30 min to cool, then I removed them from the “tinfoil” cakes and put them on a baking sheet. I then put the potatoes in a ziplock back, cut a small hole in the corner of the bag and “whipped” the potatoes onto the “cupcake” and I also added a few fresh chives ontop for myself, since my husband doesn’t like them.

Just a few side notes, I had no cupcake liners, I lined each holder with tinfoil and it worked great! I also had no zucchini to add and it was still so YUMMY! My husband doesn’t like meatloaf because he says it’s dry, I greased the cup cake tins a bit which it didn’t call for and it did make it more moist, which I think is why he liked it! So that part is up to you! Enjoy!
