Made in Minutes ABC Soup Your Kids Will Love is seriously the easiest soup you will ever make. It came about kind of unexpected in our home. I admit I got a little excited when my kids started eating soup out of a can last Spring. I know what your thinking, why give them the canned stuff in the first place, well I was desperate to get them to start liking soup and this was well planned because of course we tried the old fashion chicken noodle soup, the ABC soup and even chicken and rice. Of course the ABC soup was a hit because my oldest loves talking about what she is learning in school. It’s fun to watch her spell words while she eats. There was one ingredient in that soup that she did not like I bet you can’t guess what it is?! Anyone who follows me will know the only one meat I can’t get my kids to actually like is chicken. Every time I make chicken I make it a different way in hopes that that will be the big winner.
Summer came and went and the soup months are upon us again. I have the canned soups in the pantry but one Saturday night I was making a soup for my husband and I for dinner later because it was Date Night. It was a soup I knew they wouldn’t eat but I couldn’t figure out what to make for the kids. My daughter saw the soup stuff out on the counter and asked if they were having soup. I looked in my cabinet and I had ABC pasta, plenty of broth and of course plenty of veggies. I had an idea. I said sure sweetie I can make you soup, I didn’t have any chicken but I went with it. She then says “without chicken right?” I said sure. She then said “with just pasta, peas, carrots and corn?” I said sure! She was so excited. The hint to this easy ABC Soup for Kids is no seasoning. I know boring right!? Kids palates just aren’t into the fresh herbs like ours are. Well mine aren’t at least! So in the end it makes it even easier for us right?!
If it’s one thing I’ve learned over the years of making soup is I no longer cook my pasta in the soup, I make it separate and keep it separated so the pasta doesn’t absorb all of the broth. Have you ever went to have soup a day or two later and wonder where your broth went? Well if so that’s where it went, to your pasta! However I had a stove top of pots and pans going because I was making a few different things.
- 4 cups of vegetable broth (or chicken)
- 1 cup of water
- 6 oz of ABC pasta (or any other pasta of your choice)
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 cup of frozen carrots
- 1 cup of frozen string beans
- Pour broth and water into a large stock pan and bring to a low boil.
- Add ABC pasta, bring to a low boil, stirring occasionally until the pasta letters are cooked.
- Add frozen vegetables, stir to combine and bring to a low boil.
- Serve with crackers.
So after I realized this soup was a big hit, more so with my daughter than my son I had to freeze some. I wanted to make individualized portions that I could take out of the freezer, heat up for my daughter to throw into her cute little teenage mutant ninja turtle thermos! I took freezer baggies, the small ones work just fine. I used a coffee cup to place the bag inside, wrapping the baggy around the top to prevent the soup from spilling. Spoon in, push out the air and zip it up! I then laid a few on a baking sheet and stuck them in the freezer. Once they are frozen I just stack them in the freezer for easy storage!
