Ok we are here and officially settled! After next weekend (we have plans so can’t come up to the camp) we’ll be coming up on Thursdays and leaving on Mondays!! YAY!! God I’m so bad with change LOL….I’m just starting to feel comfortable and “at home” now! By the time we got here yesterday late afternoon and unloaded everything I realized our internet wasn’t connecting, so I couldn’t make the Grilled Balsamic Pork Kabobs that I wanted to make (Yes I still need the actual recipes to cook!!!) I hope eventually I won’t have to do that! Anyways, off to the snack shack we went for our burger and fries!! Boo loved the idea!!
Luckily first thing Saturday afternoon Comcast was able to come up, glad they did, they ended up rewiring the whole get up! LOL….sure enough by noon we were up and running! Since their was a Spaghetti Dinner down on the beach at night I wanted to get some grilling in for lunch, usually we do sandwiches, leftovers or snacks for lunch but tomorrow I’ll be be posting this awesome recipe for Sunday Supper!! It’s a great group of women who get together and have Sunday Supper……virtually of course. It’s a great way to share recipes and really talk about them which is what we all love to do!
Soooooooooooooo here is my work space while I’m up here (it’s smaller than my kitchen at home!! AHH!!!!
So here are my Kabobs put together.
Here is the Zucchini Squash Ribbon Salad I whipped up….all there was to it was peeling the veggies with a veggie peel, tossing them with olive oil, salt and pepper and nuking them for 2-3 minutes. It was awesome! I usually make zucchini and summer squash all the time (check out the kabobs!) but this was the same thing but just a different shape!!
And of course we had to have the good ol’ fashioned baked potato which I never make all winter so that was awesome! I served it with light sour cream and some scallions! AWESOME!!
Maddie had Ham and Cheese and Fishies LOL……….meat isn’t her thing!! YET!! I HOPE!!
Then after lunch we went to the beach and Maddie had her first swim of the summer with DaDa!! (I wouldn’t be caught dead in a bathing suit!! Though it was hot enough!!) Here we are gearing up………

So our weekend is off to an awesome start!! Not sure what we are cooking up tomorrow, I want to make this new recipe for Chicken Burgers that I found but I’d have to run to the store to get it, which I may 🙂 We’ve got marinated steak and chicken in the freezer so lord knows what we will be cooking up!!!
