Homemade Chicken Patties

So with a pound of ground chicken in the fridge and no other meat in the house I was on the search for a new dish that involved this such ground chicken! I love experimenting, and as my husband says, I hate cooking the same things more than once, LOL. It’s true. When other food bloggers ask me how many new recipes I photograph a week my answer is at least 3 or 4 between dinners and some snacks and lunches. I know I’m insane, I have a folder on my laptop of unposted recipes that just keeps building and building! However that didn’t stop me I still wanted something different.

Then I found this baby. I think back to the chicken patties my sister and I used to eat back when we were kids. Yup, frozen. From the package. Hey back then they were good and we didn’t care what the sodium level or fat content was. Well now I do, I try my hardest to not feed too much processed foods to my family. Sometimes it’s a convienence factor and I reach for the bag of frozen potato puffs in the freezer but tonight, I wanted FRESH! Well fresh you got and I’ll never go back to a processed chicken patty again, actually I wish I had leftovers because my sister would have died and went to heaven! I promise sis, I’ll make them again and invite you for dinner!

OK……….now this wasn’t easy, they are messy and hard to handle but if you go slow and pay attention to my directions you’ll get a slice of heaven on a bun or in my case 2 slices of heaven over rice! You can also make your own homemade Teriyaki Sauce as well, normally I would but I was being lazy and had some in the fridge so I said the heck with it!

Serves: 4

Ingredients:

1 pound ground chicken
1 large egg
1/2 onion, diced small
1 ½ teaspoons sugar
1 ½ teaspoons soy sauce
Cornstarch or flour, for coating
2 tablespoon oil
3/4 Cup of Teriyaki Sauce

Instructions:

In a bowl mix ground chicken, onion, sugar, soy sauce and egg until it becomes wet and heavy. Or sticky as some cooks call it. As long as the ingredients are mixed together your good and you can stop (you don’t want to over mix)

I then took a plate and poured about a cup of flour on a plate and flattened it out. I was able to make 5 medium sized patties and one smaller one (that one was for boo, but don’t worry she didn’t eat them!) I took the first ball flattened it on top of the flour, took some excess flour and coated the top and then placed it on a separate plate, this is where you have to be careful, they will start to fall apart but when putting them on an empty plate reform them into a patty with your fingers along the outer side. After this you’ll be using a spatula so your golden if you get them onto that plate in one piece!

For the rest of the patties coating them with the flour and getting them ready to fry. Put the oil in a saute pan and place the patty’s in a single layer inside. Do in batches if you need to, luckily I have a big enough saute pan that I could cook them all together. Cook for 5 minutes and flip. Cook for another 5 minutes and then pour the teriyaki sauce over the tops swirling the pan around to coat all of the sides and all of the patty’s. Let it sit for a minute or two, remove and place on a bun for a sandwich or on top of some rice and beans like we did! Soooooo good, so healthy and the best part is your not left with that “processed/fried/full” feeling after you eat! Win-Win in my book! Next time I make some I’m going to freeze some for lunches or a busy night!!
