Today marks my 21st day of the 21 Day Challenge. I feel good but it can get discouraging at times. For example, when you’ve been busting your butt getting up at 5 am to workout 6 days a week before the kids get up, searching and searching for healthy recipes, meal prepping even before you go camping so you stay on track, and then your husband gets compliments on how good he looks. REALLY??!! I hate how I still have to moderate a lot of moves. I’m trying to concentrate on the fact that I am indeed stronger than I was 3 weeks ago and that the people in these video’s seem to struggle a lot to get through and they are in REALLY good shape. I’m only down 3 pounds and have 6 more to go but remind me that I wasn’t in this to loose weight. I was in it to gain some sanity from being a work at home Mom to 2 beautiful kids and to teach my kids that staying healthy is important. (My 4 yo now stays in her bed in the morning and says she waits for Mommy to finish her workout!! How awesome is she??) I’m doing round 2 of this same program in hopes at the end of the 2nd round I’m even stronger. Then I will try a new challenge. I honestly think the 21 days is a hard goal. Granted I’m not doing the eating part of this challenge, (don’t hate!) I eat clean 90% of the time, I eat 5 meals a day and my portion sizes are 90% of the time perfect, I’ve really taught myself to stop eating when I feel full (my biggest weakness) OK rant over I just wanted to update everyone on my big day! Yay 21 days, here is to another 21!! So let’s talk breakfast!!
I truly believe that breakfast is the most important meal of the day. Putting something in your belly first thing is what starts your day of right. Now if I could just convince my mother that not eating breakfast is really unhealthy than I’d consider myself a healthy advocate! Heck I think it’s so important I eat two a day! Well maybe it’s because I’m up at 5 but my first breakfast usually consists of a Shakeology shake, then a nice breakfast like this beauty!
All this time I thought eggs were bad for you. Yes maybe the cholesterol is however they are great for protein! Sometimes I’ll mix in egg whites and spinach, or some other sautéed veggies for a veggie omelet. I’ve always wanted to try a breakfast buritto but never got around to it. Until I did a search for beachbody recipes and came up with this baby!!
What you’ll need:
1 whole wheat tortilla
1 tsp of butter
1/2 avocado, chopped
1/2 tomato, chopped
Pepper
2 eggs
What to do:
Scramble the eggs and add fresh cracked pepper to them. Light a small fry pan on low-medium heat. Add butter swirling it around to touch all sides of pan. Pour in eggs. Scramble until cooked through.
Place on top of the tortilla, top with tomatoes and avocados and roll the tortilla as tightly as you can. Cut in half and serve with fresh fruit!
It’s super filling because of the ingredients!
