Happy Momma!

Happy Thursday everyone!! I’ve been a busy momma! Yesterday was Momma &  Maddie day so I didn’t post much but I’ve been doing my homework. I’m super excited to start the Co-Hosting/Featured Friday’s with other food bloggers, I’ve had a great response and I’m already booking into July!!!! YAY!!! This is such a huge step for me and I couldn’t be happier. Not only that but it will be so fun to make other recipes and vice versa, I’ve met some amazing ladies so far! I can’t wait to introduce you to them!!

So this is what I woke up to yesterday 🙁 my beautiful flowers from my hubby for Easter, I had them up where the kitties can’t get them, but I had to water them and I actually wanted to enjoy them so left them their, lesson learnt….all flowers must be away from the cats!!

Madison and I went shopping yesterday for new sneakers for her, she really needed some good shoes now that she’s on the go! They are too cute aren’t they! She loves them too!

It was a pretty nice day out so we hung out on the porch, it’s pretty funny when she thinks everyone is “Dada” LOL….one day it was the mailman, yesterday it was the landscaper, she stood on thr porch trying to talk to him, yelling “dadadada” LOL! It was pretty cute!

I didn’t cook dinner last night because I took my MIL out to celebrate the end of her radiation. We always have so much fun, good laughs, we also don’t mess around! 🙂 Psssssst…… The Common Manin Concord has 1/2 off any bottle of wine on Wednesdays!!! Yes we will be back!! I also had this awesome dish for dinner. It was called “Butternut Squash” Now when I first read it, I’m thinking that’s it….just squash for dinner….but then I read this: Roasted butternut squash stuffed with citrus Quinoa pilaf and oven roasted vegetables finished with NH maple syrup. Add Chicken for an additional 3.99 which I of course did, it was AMAZING!!! I just looked for the recipe but they don’t have it posted on their page so I am going to seaching high and low for it!


Don’t forget to check out “K” K is for Kielbasa with Spicy Sauce. I made these once for a Super Bowl party with sausage, this time I figured I’d make it iwth Kielbasa since today is K and I needed to make something to go along with our Cheesy Stuffed Meatball Sliders!!

Ok so here we go……here are the ingredients:

I started by combining the meat (I used ground turkey breast), egg, oil, bread crumbs, parmesan cheese, salt, pepper, basil and parsley into a meatloaf mixture.

Don’t be afraid to get in their! But don’t over mix that could be bad! For once I did my mixing perfect!

Then I formed meatballs using 3 tbsp of the mixture for each one. I got my mozzarella cheese ready to stuff into each meatball. I used the cheese sticks because I thought it would be easiest, however next time I’ll use fresh just to make it that much more ewy gewy!!

I took a piece a of mozzarella and stuck it in the middle of each meatball.

I pushed the piece of cheese into each meatball and reformed the meatball around the cheese.

I then poured 2 cups of the pasta sauce on the bottom of a greased baking dish (another pampered chef pan I LOVE!) and placed all of the meatballs into the dish. I also poured the last of the sauce around the balls, sprinkled some more bread crumbs and parmesan cheese on top.

I baked it in a preheated oven of 400F for 30-35 minutes. It smelled up my whole kitchen! Smelt like an italian restaurant!!

I cut my dinner rolls and assembled each meatball.

I even had to cut one open to see the cheese inside! This is where I would use fresh next time instead of the sticks!! (Thank you boo for letting me have a few cheese sticks LOL!!)

My husband gave it an 8 out of 10, hmmmmmmmm wonder if I’ll ever cook a 10!!!! I have leftovers and I’m pretty sure boo will eat some!! How can you not, LOOK at the yumminess…….I surrendered, into having 3!!!
