Ok now I feel really bad because I was supposed to make this Honey Glazed ham almost a week ago! AHHHH!!! LOL….just goes to show how much things come up! My sister was visiting us yesterday afternoon to spend some time with my daughter and my husband and I decided to take advantage of her!! So we took off for an early dinner out! We had a coupon to to Ruby Tuesday’s and I love their Mojito’s and Spaghetti Squash! 🙂 YUM!
But I have the ham cooking in the crock now (again LOL)
I’m making Honey Roasted Carrots w/walnuts. I’m also making my own Butternut Squash Risotto so by now you must know what it’s called….Momma’s Butternut Squash Risotto. If you are looking for a simple risotto, this is the one to try!!
The Carrots were really good (and as you can see I used almonds because it’s what I had and well OMG nuts are so expensive, I despise spending $5-$6 on a bag of freaken nuts! Anyways the only thing different that I wouldn’t change is I would use a 1/2 Cup of honey, to me it was just too much and it made a mess after it was cooked, it was very good but I know it would have been better with less honey, that’s just me I guess. Very simple to make as well.
Peel and cut your carrots into french fry size peices.
Spinkle with salt, drizzle with oil and coat and toss in honey. Bake at 450 for 20 min.
While that is roasting, mix your nuts with salt, olive oil and lemon juice. Spoon over the carrots and serve!!! YUM!
The Butternut Squash is as easy as this looks!!!
Yes you can use fresh squash as well, I just went the easy route!
 And our completed meal looks like this folks!! I can’t even believe that my daughter ate every last bite of this!! I was so proud of her!!

Ok soooo tomorrow my mom and sis are coming for an early dinner so I’m making a Pot Roast, I wanted to do something different besides the usual 3 Envelope Pot Roast that I usually make (that’s how good it always is) so instead I found this recipe from a group I belong to on Facebook it’s called Awesome Pot Roast.
