Featured Monday – Little Mommy, Big Appetite

Happy Monday everyone! Thanksgiving is officially over and our belly’s have been full all weekend! I don’t know about you but I’ve had a lot to be thankful for. In case you missed our news check it out Here. We didn’t have a Featured Friday this week because my Co-Host and I have been pretty busy so we postponed it until Monday! So here we are….let me introduce you to Kim from Little Mommy, Big Appetite!! Kim is the writer, chef and Mommy behind this cute blog! She even has really cute sidekick that helps her in the kitchen.

This Momma’s blog is full of some great recipes that you HAVE to go and check out. I had a very hard time picking one and I know I’ll be back to make a few more, like Kim’s Buffalo Chicken Quinoa Bites, I’m always looking for a new way to use Quinoa! Can’t wait to try her Baked Chicken & Vegetable Wontons! I also think you should check out her Friday Find #17, Little Holiday Additions, I think I’ll be looking into making a few of them for the holidays!

I love how she commits to one day a week that his meatless, she calls it Meatless Meals. I too try and do one night a week meat free, it also saves on money! Kim also tries to avoid buying prepackaged or canned foods. I love that she even makes her own beans, I have to get on that train!! She is a lucky Momma because her little one eats most things she makes (ugh…..what I’d give for that!!) Also like me, Kim enjoys eating out! I’m with you Momma, everyone needs a break! Though she avoids chain restaurants she takes eating out as an opportunity to think of new ideas to bring back to her own kitchen, I enjoy nothing more than remaking dinners at home to make them healthier!!

Kim feels as if preparing meals for her family is a way of providing for them.  (I so agree!) She loves to set a meal in front of them and know (almost) exactly where it came from and how it was prepared.  She enjoys being able to have control over the ingredients and the creative aspect of dishes.  She is a little mommy with a big appetite!!!

So if you don’t know me by now, I love trying new side dishes, I get sick of the same things over and over again so I like to change it up, enter Kim’s recipe for Roasted Potato Stacks! This was the perfect opportunity to use my Mandolin that I bought a few years back from Pampered Chef, I love this thing! It cuts your veggies the same size!

Roasted Potato Stacks
Adapted from:  Little Mommy, Big Appetite
 
Serves: 4 people
3-4 regular-sized potatoes, peeled, and sliced thin
1/3 c. olive oil
1 tsp. each of onion powder, garlic powder, parsley
1/2 tsp. salt and pepper
1/4 tsp. red pepper flakes
 Fresh parsley (for after baking)
What to do:

Preheat the oven to 375 degrees.

Peel and slice the potatoes thin .. as thin as you can nicely slice them (try to make them all the same thickness). Or insert your Mandolin here!

In a small bowl, mix the olive oil and herbs, I mixed mine right into my measuring cup so I could easily pour.

Stack 4-5 potato slices in a muffin tin, and then pour a little of the oil mixture on the stack.  Top with 4-5 more slices and a little more of the oil.

Repeat in the remaining muffin tins, I used 3 baking potatoes and filled up two tins (12). Bake 20-30 minutes, or until the potatoes are crispy on the edges and tender in the middle.

Top with fresh parsley. Yes we are a sour cream family!
