While looking for the just the right words to introduce our next Co-Host for Featured Friday’s I realized their are just no right words for her. I met Nicole not too long ago and instantly felt like she was my long lost “other half”. I have always enjoyed her blog, however recently I’ve gotten to know her as a person. She is the chef, author, mother and wife behind Daily Dish Recipes. She has graciously opened her arms to me in the blogging world and has been a tremendous help, a wonderful supporter and she just makes me want to strive so much more in my writing world. Not only does Nicole run her awesome food blog she also enjoys scrapbooking (told you she was my “other half”) taking pics, reading and DIY home projects! She is truly the meaning of Writer by Day, Blogger by Night and a Mom during all the in between times!! How can I not admire this Momma!! So make sure you go and visit Nicole over at Daily Dish Recipes because let me tell you………you are NOT going to be able to try just ONE recipe of hers!
Now when you see which recipe I chose of Nicole’s your going to wonder why I chose such an easy one! Well I have a reason. I was looking for something to make for lunch the other day while my daughter was napping, wanted it to be quick, quiet and good. I knew I had to make something of Nicole’s soon so I went searching……..low and behold I found a sandwich full of heaven. Oh yes I did. I’ve been experimenting with avacado’s lately and not quite sure when to use them, so I was quite happy when I read this recipe and realized I had all of the ingredients! I’m at my campground camping this week with my family and though I have a full fridge and full stove some of my options are limited. This however was the best decision I made that day! Since I only made one I obviously shortened my ingredients and I used pre-cooked bacon, I know I know but it’s what I had and the fat and calories aren’t bad believe it or not!
Grilled Avocado & Bacon Sandwich
- 1-2 Avocados
- 1 pkg Bacon
- 4 Cheese Slices
- 8 pieces of bread
- butter
- Red Onion (Oh I added this, just because..again something I like to add to everything!)
In a skillet, cook up the bacon. If you don’t like lots of bacon, you might only want to use half a package. I, like Nicole’s family LOVES bacon, I could add it to anything, I could live on it, wait I do. Once the bacon is cooked, drain and allow to cool slightly. Spread butter on one side of each of the eight pieces of bread. Layer with cheese, then bacon then top with the avacado. I agree with Nicole, layer on as much of each ingredient as you want………..trust me.
Top with a buttered slice of bread with the butter facing up.
Allow to cook on one side for about 3-5 minutes or until golden, and then flip it over. Cook for an additional 2-4 minutes or until golden brown. I placed a piece of tinfoil over the top of my skillet because I wanted the really melt that cheese. And boy did I ever!
The creaminess was amazing. It was by far one of the best sandwiches I’ve ever had and if I had more avacado or bacon I would have been having it for lunch all week!!
