Hey everyone!!! Yay for Friday! Yay for the long weekend! I have a very very very special Co-Host with me today!!!! She doesn’t write a blog, however she is a Momma, she is a wife, she is a friend of mine and she is one of my biggest supporters of this little blog I started about a year ago!! Let me introduce Jackie!!
Jackie is a friend of mine but let me give you a little background before I tell you how much of a great person this girl is. I met Jackie’s husband back when I was 18 working at the local grocery stop. Jim and I have known each for other 16 years OMG, wow we are old. Anyways, I remember Jim always talking about meeting “the one” and how badly he wanted this to happen. The first time I met Jackie, Jim pulled me aside and said “Well…??” I said “well if she can hang out with all of us then she is a trooper in my book!!” They were married in October of 2010.
In July of 2011 Miss Layla was born. Since then, Jackie and I have become a lot closer since becoming mother’s. I guess life will do that to you.
Jackie is a working mom who would do anything for her baby girl, her family and her friends. I’ve really come see how big this Momma’s heart is! I like to call her bold because she is a tough nut and doesn’t take crap from anyone, one of the very many things I love about this girl. Since we are now raising our daughters together I’ve really come to see just how much we have in common. I love the idea of our girls growing up together, celebrating birthday’s together and even some yearly camping trips together (can’t wait a few more weeks and we will be camping together!)
Another reason why I wanted to Co-Host with Jackie this week is because she has been such a solid support system for me and this blog. She is always giving me positive feed back, encouraging me, and of course trying a lot of my recipes. I love knowing that my recipes are shared around other people’s dining room tables, especially such close friends of mine. When I told Jackie about the redesign of my blog she was so happy and excited for me. I have my husband and my mom who are very positive and encouraging but it helps when it’s a friend too. I just feel the positive energy when I talk to her about it.
And lastly, don’t worry, we are featuring a recipe!!! Jackie emailed me a few weeks ago wanting to share an awesome Crock Pot recipe she had tried with me. I love it!! Love trying other recipes, so I immediatley added it to my menu for that week. I did end up serving it on a night where we had friends over so it was nice to get some other reviews of this dish too!! It was a great dish!! I loved it, my daughter loved it, my husband loved it and my company ranted and raved about it! So………thank you again Jackie for sharing this recipe with me and keep them coming!! I’m honored to have you in my kitchen any day:)

Angel Chicken
Recipe From: The Crockin Girls
Cook Time: 7-8 hours
Servings: 4-6
Ingredients
- 4 to 6 Chicken Breasts
- 1/4 Cup of Butter
- 1/2 Package of Dry Italian salad dressing mix
- 1 Can of Cream of mushroom soup
- 1/2 Cup of Dry white wine
- 4 Ounces of Cream cheese with onions and chives
- 1 Box penne pasta
- Chives, for garnish
Directions
Place Chicken on the bottom of the crock pot. Sprinkle the Italian seasoning on top of the chicken. Add the remaining ingredients except for the pasta and mix together. (Don’t worry it’ll all melt and mingle together!!)
Cook on low for 7-8 hours
When the chicken mixture is done, prepare penne pasta according to package directions; drain
Mix pasta with chicken. Serve in a large bowl with chives sprinkled on top. I forgot the fresh chives because we were entertaining and trying to feed two kiddo’s at the same time. I also added broccoli in to mine, it instantly became a dinner!! I also added the broccoli at the beginning of the crock pot time and it was perfect.
Cheese and Chicken, that’s a win win in my book!! We will be making this again soon!! I can see this one as a quick go to meal!

First off I am loving loving loving the story…..where does the time go. I remember it like yesterday when Jim was a young boy working with me and searching for that perfect girl. Here he is now with a wonderful wife, a beautiful little girl, and I am going to be making her recipe because it sounds so yummy, thanks for sharing, enjoyed the great pics.
What an amazing and heart felt story. It warmed my heart and made be smile. The recipe looks very cool and one I will need to try out very soon. As always, thank you for a great post
