I’ve been using “The End of Summer” a lot these days haven’t I??? Well I decided to name this one End of Summer because it has all the veggies in it that you’d get during any trip to the Farmer’s Market. Add whatever veggies you have or what your family enjoys. I don’t like a lot of red sauce when eating pasta so I’m always looking for alternatives, here is a great one I thought of using Chicken Sausage. My daughter ate it and she is extremely picky, she also had it for lunch twice the next week!
Ingredients:
1 small bunch of broccoli
1 large zucchini
1 pint of cherry tomatoes
1/2 pkg of sliced carrots
1 small can of water chesnuts
1 small can of mushrooms (or fresh is fine)
1 box of Smart Taste Pasta ( you can use any pasta)
1 pkg. of Italian Style Chicken Sausage
1/2 Cup of shaved parmesan cheese
Herbs de Providence
Salt & Pepper
1/4 Cup of vegetable broth or white wine
3 tbsp of Butter (I used LOL Olive oil and Sea salt)
2 Garlic Cloves
What to do:
I started by getting all of my vegetables ready to just be able to add them when it ready. I cut the zucchini into julliene strips, cut my cherry tomatoes in half and cut up the broccoli heads into bite sizes pieces.
In a large saute pan, on medium heat, add the butter and garlic. Saute for a minute or two and then add vegetables (if the mushrooms are fresh add them at this time, if they are canned, wait.)
Stir the veggies coating them with the butter and garlic. Add the seasoning, Salt and Pepper to your liking. Saute for a few minutes. Add the wine or broth, bring to a boil and cover for 15 minutes or until the vegetables are crisp but cooked.
While the veggies are cooking, cut up the sausage into bite size pieces. Stir them into the veggies, add canned mushrooms, half of the parmesan cheese and cook for another 10 minutes, uncovered. Stir to melt the cheese.
Serve with shredded Parmesan cheese on top! Wala…instant healthy pasta dinner! Well my daughter ate everything but the broccoli! 🙂
