Anyone that follows me knows that I try and have a date night or two a week for my husband and I during the week. We feed the kids, put them to bed then I make a separate dish for ourselves. Usually something the kids would never eat, it allows me to experiment and try new recipes and it gives us a chance to catch up. I’ve also jumped back on the 21 Day Fix Challenge. So I bring you eight 21 day fix worthy recipes! So I’m back to measuring all of my food and working out six days a week. I’m sore, I’m so damn sore I could barley walk this week, but I’ve been on pinterest pinning recipes that would work for my family and I. On days that we eat together as a family I make myself cauliflower/broccoli rice and the kids and husband eat regular rice, or I serve them pasta, and I make myself zoodles! Sweet and Sour Chicken Rice Bowls
I’ve made these with a yellow container full of brown rice or even egg noodles (it’s crazy how much actually does fit into that little container. Lately I’vn become addicted to cauliflower/broccoli rice, if your following the 21 day fix plan you don’t even fill a whole green container to get a good amount! This dish is easy, filling and delicious!

I found this on pinterest. The only change I made to make it a tad bit healthier was I used a can of fat free evaporated milk, that has been my new favorite go to in substitution of anything creamy. I sometimes even use a can of it in my regular chicken noodle soup because I’m crazy and I like the “white/creaminess” aspect of soups. Don’t let the pickle juice scare you, with a 90% lean ground beef dive in! Your aloud!
Taco Bowls
There is no perfect recipe for these bowls of deliciousness. It’s a great way to make ahead a few meals and stay on track. I ground up the meat with a packet of taco seasoning and then I measure out the rest of the ingredients for myself. My husband usually chooses a hard or soft taco shell I serve mine over a salad or eat it all mixed up! As you can see I sometimes make meatballs out of the meat too.
These are so fun to make during the summer, I’ve made them in the oven as well but it’s a great way to measure your food. I use the 21 Day Fix containers to make my packets and I always make two for myself so I have lunch the next day. We’ve also made it with chicken fajita style!
I found this recipe on pinterest. I added a little fresh mozzarella cheese and served mine over cauliflower rice but again it gave me the flexibility to serve it over pasta for my husband and of course the kids chose plain pasta with none of the chicken! Am I the only one who is obsessed with Caprese anything? Caprese Grilled Cheese, Caprese Turkey Burger, Caprese Pizza or Caprese Meatloaf anyone?
Flatbread Pizza
This one is my new favorite! It’s a 6 inch whole wheat tortilla. At first it seems so small but if you top it with filling foods I promise you, you’ll be satisfied! One day I topped it with cooked chicken (fill that red container right up!) I filled up the blue container with mozzarella cheese and drizzled a teaspoon of BBQ sauce and set it under my broiler for approximately 5-8 minutes. The second time I made it I topped it with chopped peppers, chicken, mozzarella cheese and drizzled it with a low fat fajita dressing. It’s just brilliant!
Another recipe I found on pinterest that I made last week. I’m not calling them rice bowls because there was no rice in mine! I served mine over cauliflower riced and my husband, mother-in-law and kids had theirs over egg noodles. I can’t believe my picky mother-in-law not only ate every bite but asked for leftovers to take home, that is a score in my book!
