I found this recipe in yes surprise surprise…….Taste of Home. It caught my eye because I’m kind of in love with a little guy called Avocado 🙂 This is a quick and easy breakfast. Note to self: Trying to pass off this dish as just Ham and Eggs to my 22 mth old. Not gunna happen!!
Ingredients:
Serves: 2
1 Avocado
2 Eggs
1/2 Cup of egg whites
4 slices of deli ham, cut into pieces
Salt & Pepper to taste
1/4 tsp of garlic powder
1/2 Cup of reduced fat shredded cheese (I used mozzarella, the recipe called for Monterey Jack Cheese.)
What to do:
Cut the Avocado in half and make lines horizontally and vertically and peel out the pieces. Crack the eggs and scramble them together with the egg whites. Cook on medium. Add in the Avocado’s and pieces of ham and finish scrambling the eggs on medium heat seasoning with salt and pepper to your liking. Add the cheese at the end. Then. Mash.
Feel free to add in any other veggies or meats that you may enjoy!
One of my favorite things is eggs with avocado…I love the combo! I usually do omelets like this, but this looks a lot easier!

Breakfast is my favorite meal. I live advocates. I hate to admit this but I haven’t tried eggs with advocates. This recipes looks great so that means I’ll be giving it a try. 🙂
