This was a simple dish that was shared at a Pampered Chef party I went to this summer. I know my 4 year old likes to only do “certain” things while cooking in the kitchen with me and I thought this would be perfect because she loves to “mash” anything! This is a refreshing snack and I love love love using it on sandwiches as well. My daughter wouldn’t try it but I sure did love having her in the kitchen to help!
Easy Cucumber Dill Guacamole

This is adds the perfect amount of kick for a healthy and light snack. Scoop with blue tortilla chips or slather on a sandwich!

Ingredients
- 1 jalapeno, chopped
- 2 ripe avocados
- ½ english cucumber, chopped
- 1 lime
- ½ small red onion, chopped
- ¼ cup of fresh dill, chopped
- 1 tsp of cumin
- ½ tsp of salt
- 1 clove of garlic, minced
Instructions
- Mash the ripe avocado's as much as possible. Add in Jalepeno, cucumber, red onion and garlic. Stir to combine.
- Add fresh dill, juice to lime, cumin and salt. Stir to combine.
- Dip with favorite tortilla chip, cracker or slather on a sandwich.
- **Tip: Use a manual food processor for a better consistency. I used the Pampered Chef one, it's manual and gives you the chance to still have some small chuncks! For a smoother consistency feel free to use a food processor and pulse.
