Day 2 at the gym for this momma!!

Popping the Old-Fashioned Breakfast Casserole in the oven when I get back!! YUM! Creamy Keilbasa bake for dinner tonight stay tuned for reviews!! Happy Tuesday!

Wow what a great day. I must really be in the holiday spirit, either that or finally getting back to the gym is making me feel better!! My friend and I took a class called “Power Hour” WOW is all I have to say, here it is 7pm and my body is already hurting, I have a feeling I’m not going to be able to move tomorrow, probably not the best class to start with after not working out for a year, however we finished it and if anything we take tomorrow off and it motivates us. Maddie did well in the daycare again THANK GOD. Now I have no excuse to not go!! None of the, “I forgot my sneakers”, or “My mom called, that was an easy 2 hours!” Gosh I love that commercial! LOL…..

So anyways today this momma cooked her Old Fashioned Breakfast Casserole that I put together last night. Can I just say it’s the best breakfast quiche/casserole I’ve ever made and it’s healthy!!! I ended up cooking the onions and canadian bacon a little first then added thawed out broccoli peices to it!! YUM is all I have to say I can’t wait to get my hubby’s opinion tomorrow morning, and my daughters for that matter, I was able to pack up 12 pieces!! Check it out to see my updated pics! I also tried the Creamy Keilbasa Bake! The verdict is in……..my husband loved it and my daughter even ate the keilbasa!! I added some veggies and took out the potatoes and served it on brown rice so check out my pictures!  

I also added a few things, I added Left Over Skinny Turkey Soup, why not, it’s what we are all going to be making come next week right!! Sounds yummy, unfortunatly I go to my aunts for dinner so I don’t get left overs!! I added a Steak crock pot dish, Baked Steak & Mushroom Gravy because that’s what I’m making tomorrow night since I have to bake my Pumpkin Cupcakes and Mashed Sweet Potato Brulee for Thanksgiving!! I also added a new section under “My Cooking School” It’s from Rachael Ray on how to Grocery Shop wisely!!

So lots to do tomorrow, it’s supposed to be yucky outside so we are taking the day off from the gym, I think I’ll be lucky to get some light yoga in to strech these sore muscles out, I’m going to add a Pizza Dip tomorrow that I’m going to attempt to make for my Mother-In-Laws Thanksgiving Saturday. Then a night of cooking and baking while hubby watches the B’s!!!! 🙂 Gobble Gobble!!
