There are many days where we are up and at em! Some days breakfast needs to be easy. Or some days we need a late in the afternoon snack to hold the kids off until dinner so in honor of Smoothie Week I wanted to create a smoothie for Miss Madison that she would eat. We’ve made smoothies in the past that she’s loved however this time I wanted to try something different. If you know me, then you probably already know that I have a hard time getting this little lovely to eat anything healthy. So lately I’ve been sneaking veggies into all of our meals. Yes it’s possible!! If I can do it, anyone can. Check out some of my latest recipes sneaking in “odd” ingredients to sauces and meals so my kids will get some vegetables in them. The blender is my best friend these days! Parmesan Mashed Cauliflower and Potatoes, Lemon Pesto Chicken, and my latest, Veggie Mac N Cheese Casserole.
So this time I wanted to add an Avocado to the mix. One of the things my daughter, and now son does is snack snack snack! I wanted to make a smoothie that they would both drink that would keep them full longer than the typical breakfast or snack. I was a little hesitant on letting her help me make this smoothie because of the Avocado. So when I was adding the ingredients to the blender and the dreaded question of “What’s that?!” came about I quickly just said, oh it’s what’s going to make it green! She accepted the answer and went about adding our ingredients. YES! I told her we wanted to make it Green for Christmas so that’s how this little smoothie got it’s name. I was nervous at first to taste it because I’ve never added an avocado to any smoothie before however the fresh juice from the clementine’s really helped balance it out. I loved the taste of it and both of my kids ate it! YES both of my picky eaters!!! Though it didn’t stop them from asking for something to eat an hour later I still consider this a success because they both liked it!
What you need:
A really good blender- Need idea’s for a good blender?
1 Banana’s
1 Avocado’s
4 clementines (juiced-less sugar than bottled OJ!)
3 tbsp cup of honey
1/2 cup of nonfat strawberry greek yogurt
2 1/2 cups of ice
What to do:
Add all of the ingredients to a real good blender and puree on 1 for a few minutes. Taste, if it needs to be a little sweeter or if you don’t like it super thick add the juice of one more clementine!
