I tried these little cuties on Cinco De Mayo back in May, yes yes I know, I’m just getting around to sharing them with you now however……….I’ve had my hands quite full since then! 🙂  Literally quite full! Don’t worry she really does love her little brother she just doesn’t understand “gentle” quite yet!!!
This recipe was inspired from Six Sisters Stuff. Have you ever been over to their site? If you haven’t you should….imagine 6 girls, 6 sisters, 6 woman with awesome recipes! Yay seriously……I cooked my chicken in the crock pot that day so when it was time for dinner all I had to do was shred it and throw this awesome recipe together!
Ingredients
- 1 envelope of Ranch Dressing
- 4 slices of pre-cooked bacon, chopped
- 4 scallions, whites and greens chopped
- 3 small chicken breasts
- 1 cup of reduced fat sour cream
- 1/2 cup reduced fat cream cheese
- 10 whole wheat/flour tortilla's
- 1/2-1 cup of Monterrey Jack cheese
- Cooking Spray
- Water
Instructions
- Season the chicken with half the packet of dry ranch dressing and place on the bottom of your crock pot. Add about 1/4-1/2 cup of water, use your judgement, you don't need much, just enough to keep it from burning. Cook on low for 6-8 hours.
- Once the chicken is falling apart, shred it and add it to a large bowl. Add in half of the dry ranch dressing that is left (reserving the last half for dipping) 1/2 cup of the sour cream, (reserving the other half for dipping). Add in the cream cheese, green onion, bacon pieces and cheese. (if you want it to be less fat and calories stick to the 1/2 cup, trust me it's still awesome!)
- Stir well to combine. Pre-Heat oven to 425F. Line a baking sheet (or dish) with tinfoil and lightly spray with cooking spray. Add a few tablespoons of the chicken mixture to each tortilla, roll and place seam down on the baking pan. Repeat for all 10 tortilla's.
- Spray the tops of the tortilla's. (this browns them nicely and gives them that crunch!) bake for 15-20 min. Mix the last of the dry ranch dressing with the last of the sour cream and use that for dipping!
Notes
You can use whatever you'd like for dipping. I liked this creation I made, try salsa or even ranch dressing, that just seemed like a little too much ranch for me but don't be afraid to experiment!
I’m one of those Momma’s that needs to serve veggies every night, I believe my little ones need them, I don’t always, but serving the veggies, makes me feel less guilty for making goodies like this for dinner. Believe it or not my daughter loved loved loved these. Can you tell?? I’m not sure if it was the dipping or the actual taquito, whatever the reason, she ate one of my meals so I was happy!! This kid could live on boxed Mac N Cheese and pizza so maybe I should make more meals that can be “dipped!” Look at the sour cream on that cute little face of hers!
