I know you are probably pesto’d out or have had it with my skillet talk but trust me when I say this all in one Chicken and Pesto Skillet Dinner will have you breaking out that skillet and homemade pesto again! I know everyone is in full gear with grilling and being out doors as much as possible. Well at least we are! So I made this dish using my grill and side burner. I’m down to one jar of Homemade Kale Pesto in my freezer now so it’s time for me to hit the store and stock up on the ingredients so I can fill that freezer up again. There are so many great things you can make with Pesto. I slap it on a wrap when making lunch, I add it to any kind of pasta dish and I just read in a magazine that it’s a great way to add flavor to a soup as well, you know I’m trying that next! Make a batch of my Homemade Kale Pesto and try some of these dishes because you won’t be disappointed. Easy Skillet Pesto Pasta which is a great way to get your kids to eat pasta a different way. I call it “green” pasta and I make a few batches with less red pepper so it’s not too spicy for them, my kids are bland! Or you can try my Healthy Lemon- Pesto Chicken another great dish that is super easy to make.
- 2 cups of Kale
- 1 cup of Spinach
- 1 garlic clove
- ½ cup of walnuts or almonds
- Red Pepper (optional)
- ¼ cup of EVOO
- ½ tsp of salt
- Juice of one lemon
- 4 oz of pasta of your choice
- 1 pint of cherry tomatoes
- 5 chicken sausages sliced or 2 cups of rotisserie chicken
- Parmesan Cheese (garnish)
If you haven’t noticed by now I’m a huge fan of throwing together, pasta, chicken of some sort and veggies to make it an easy dinner! Don’t forget to back and get some more inspiration in the kitchen!
