Day 3 of this exciting challenge!! I had to choose this recipe because I just made it for the first time this past weekend and it was to die for. My husband and I are headed out tonight for an appt so I won’t be cooking dinner. I also made Homemade Tortilla Chips for the first time, simply because I didn’t have any at home and I was dying for some to dip into this soup! This is a simple recipe, it’s flavorful and well you just have to trust me!! Click here for the actual recipe.
I started by chopping up the garlic and onion and sauteing it for 3 min with oil to get the flavors going!
I then added all of my ingredients to the crockpot, the cooked garlic & onions, corn, drained black beans (I always drain and rince them), crushed tomatoes, chicken broth, tomato sauce and the seasonings.
I added my chicken last, just laid the breasts on top of the soup and let them sink.
I then cooked it on low for 5 hours (every crock is different so depend on 4-6 hrs on low) Once your chicken is “shreddable” your good to go to move to the next step which is taking the chicken out and shredding into pieces. Then I put the shredded peices back into the crock and adjusted my seasonings (this is when you can adjust it to your taste buds.
I then just turned it to warm until my husband and I were ready to eat it!! The key ingredient to me when serving it was the dollop of sour cream on top and a little shredded cheese. Of course with the Homemade Tortilla Chips to dip them in!!

I love Chicken Enchilada Soup!! It’s one of the few soups that my husband likes. Love your Easter egg pics, we are dying ours later this week.
