Boy oh boy do I have another #WeekdaySupper to share with you guys! Who doesn’t love a good Bruschetta??!! Something about seeing Bruschetta on a menu under the appetizer section that just makes my mouth water when I’m deciding on what to order! I don’t know why but the idea of fresh diced tomatoes, oil, fresh basil and garlic all served on top of a toasted piece of bread….Mmmmm….Yummy. So originally I wanted to incorporate some chicken into this dish I was thinking of, then I imagined some stuffing would make this dish complete.
We all need fast and easy dishes to make during the week for those crazy hectic nights. Well this one will not disappoint your family. I actually made it during the day while my kids napped and was able to keep it on the stove top until my husband came home from work. I served it with some brown sugar glazed carrots (my daughters favorite of the month) and it made one great meal! Another plus to this dish, well it was made in one pot!
Prep: 20 min.
Bake: 40 min.
Serves: 4-6 1 & 1/3 Cups Ea.
What you’ll need:
1 14 oz can of diced tomatoes (basil and garlic), undrained
1 5 oz pkg of Stove Top stuffing mix, whole wheat
1/2 cup of hot water
2 celery stalks, diced
1 small onion, diced
2 garlic cloves, minced
3-4 chicken breasts
Basil leaves, roughly chopped
1 cup of part skim mozzarella shredded cheese
Olive Oil
What to do:
Preheat oven to 400F. In a small saute pan, toss in the celery and onion and saute with the oil for a few minutes. Add garlic and stir to combine.
In a separate mixing bowl stir together the stuffing, diced tomatoes, hot water and the cooked mixture and set aside.
In a 2-3 quart greased baking dish place the chicken breasts on the bottom and then top with fresh basil and shredded cheese. On top of that pour in the stuffing mixture and evenly distribute.
Bake for 30-40 min until chicken reaches (165F)
Serve stuffing on the side with cheesy chicken or serve all together!

This is such a fun recipe! Mixing stovetop with all sorts of tomatoes and cheese really DOES replicate bruschetta. So cool!
