I bought a new cookbook a few months ago (during the move process) and I’ve been going through it little by little. I bought it right after the holidays because I wanted actual recipes for my new KitchenAid mixer, yes this HUGE cookbook is dedicated to using the KitchenAid mixer!! Though now that I’m thinking of it, not every recipe calls for using the actual mixer…..hmmmmmmm….think think think….hmmmmmmmm….yeah I don’t know what’s up with that, nor do I care because this dinner actually rocked, and I’ll take credit for most of it because I added what I wanted and “just went with it!”
Beef Spiedini w/Orzo & Veggies
Ingredients
- 1/4 cup Olive OIl
- 1/4 cup of red wine
- 1 tsp. dried rosemary
- 3 cloves of garlic, minced
- 1/2 tsp of salt
- 1/2 tsp of dried thyme
- 1/2 tsp of black pepper
- 1 1/2 pd. of beef top sirloin steak, cut into bite size pieces
- 6 cups of water
- 1 cup of uncooked orzo
- 1 tbsp of butter
- 1 tbsp of parsley
- 1 zucchini
- 1 summer squash
Instructions
- Combine oil, wine, garlic, rosemary, salt, thyme and pepper in a large zip lock storage bag. Add beef, turn to coat a few times. Let marinate in the fridge for 30 minutes.
- Slice zucchini and summer squash into thin slices. I used my mandoline slicer from Pampered Chef.
- Bring 6 cups of water to a boil (add in some salt) over high heat. Add orzo, reduce heat and simmer for 15 minutes or until al dente. Drain and set aside.
- Grill beef on medium high heat. I made this on the stove top and used a saute pan, Worked just as great. Place steak aside and cover with a paper towel.
- Place zucchini, summer squash, butter and parsley in same saute pan as the steak. Cover and set to medium for 10 minutes, moving around every few minutes. Add in orzo and combine. Season to taste with salt, pepper and more parsley if needed.
- Place orzo in a serving dish, place steak on top and serve.
