WOW….what a weekend! Fun filled, good food, great family, new traditions, honestly it was the first Christmas that I really truly enjoyed for the first time in years. I cooked all day on Saturday, it was so much fun, listening to Christmas music, knowing MM was being taken care of! I made the Old Fashioned Breakfast Casserole, I only had 3 pieces left so obviously that went well! I also made up a dish that I called Ham & Potato Casserole, its such an easy dish to make and why not use leftover ham to make it!! I used packaged cubed ham and Simply Shredded Potato (I found this in the butter section). Mixed it with oil, pepper and salt and wala! A great easy breakfast side dish!! My Cranberry Nut Bread was good however I made it the day before and when I went to slice it, it fell apart!!! I guess I should have pre-sliced it after it was cooled off and stored it that way. I attempted the Crescent Christmas Tree, I couldn’t figure out why everytime I make any kind of Crescent roll I burn the bottom no matter how much time I shave off the bake time. Then it dawned on me, I believe the rack is too close to the bottom. So I did burn them and was embarressed to serve them that way at my Mother-In Laws so they ended up in the garbage! I got great compliments on the Southwestern Dip I served at my cousins Christmas night. I thought it was really good. I replaced the 1/2 a cup of mayo with 1/2 cup of softened cream cheese because I hate mayo! I thought it was great!
Well me, my daughter and my hubby were very spoiled!! I still have no idea where all of these new toys are going to go in our 1000 sq foot condo!! We built a corner in our living room for all of her toys, but yes my kid still prefers the nips on the liquor shelf or pots and pans!! Being out past her bed time and skipping a nap for 2 days in a row has really made me reconsider EVER being out past 7 again! Last night MM was so exhausted we put her in at 6:30 and she cried off and on from 6:30 to 9:30!!! It was brutal, I felt like I had an infant I was sleep training again, and now she’s doing it again since she got up from her 40 min nap this afternoon!!! Shoot me now folks!
So 2012 is rapidly approaching! I still need moms to volunteer to tell their story for The Jouney of Motherhood. OK, the holiday is over, no more excuses! This is the time of year when we are most thankful for our families so have at it and email me I’d love to hear and feature your story!!
28 Day challenge is right around the corner, this momma is ready to eat healthy again and get active! My back has been killing me everyday and I have a feeling it has to do with the fact that I’m a back sleeper & the extra weight I’m supporting over here!!

For NYE I think my husband and I are going to stay in and I’m going to try and cook us a Turkey dinner, which I’ve never done!! I’m going to make the Sneaky Zucchini Chicken Nuggets too!! My friends are coming for dinner tomorrow and I’m thinking of either making the Honey BBQ Pork Chops in the Crock or the Basil Cheesy Chicken. Friday night my aunt and uncle are coming for to see my daughter and I’m making the Honey Glazed Ham in the Crock!! Can’t wait!!
